What is chicken casserole exactly and how do you make it?

Just that really!

I know how to make beef casserole/stew/scouse type thing but often see chicken casserole recommended as a good family meal. But what is it exactly? And dies anyone have any good recipes?

Nice easy recipe is -

lob chicken pieces (legs, thighs etc) sliced carrots, new potatoes and red pepper bits into a tin of tomatoes and some chicken stock (from a cube) in a casserole dish. Add whatever herbs you fancy - thyme, oregano, tarragon etc. Good dash of red or white wine if you have it.

Cook on a low heat for two or three hours. Easy peasy. Serve with crusty bread.

i made a reasonable one today but am rather vague about it

use large pan with lid you can put in the oven
preheat oven to lowish heat - 160 or so
brown chicken in a spray of oil - when brown on all sides, take out again
soften quartered onions in a bit more oil; add garlic
add carrot pieces and washed potatoes of about roastie size; stir to cook;
add chicken again and pour over enough water to cover the vegetables
add sliced mushrooms, some veg stock powder, seasoning
cover and put in oven, take out an hour later

i know flour comes in for most people but i don't usually bother

As with any other stew.

I just bung chicken (no skin) onions and carrots in slow cooker with a little stock. About an hour before dishing up chuck in some frozen veg.

If doing dumplings then I add them at the same time as frozen veg.

I may also add either rice or pearl barley a couple of hours before eating if I feel like it.

I have googled but there seem to be about 8 million different versions and I wanted to know what the bog-standard version contained.

I suppose I am mainly wondering what the liquidy bit is.

I don't have a recipe I use every time- it's just what ever happens to be around.

In my opinion do not use chicken breast, it's too dry for slow cooking use thighs/drumsticks.

The liquid bit can be stock, cider, wine or tins of tomatoes depending on what you have going.

I do one with celery, onions, bacon and mushrooms cooked in stock. I add any left over cream if I have some but don't worry if I don't. Sometimes it's crusty bread or mash. I have also used creme fraiche instead of cream.

I have another with chorizo, rice, peppers, tomatoes and peas. I bung in rice with this

Another with carrots, onions, celery, pots and then stir fry cabbage to go on the side.

The beauty of the chicken casserole is it is never the same and uses up a load of leftover bits of veg.

I don't think there is a bog standard recipe, really. You only need to follow certain principles and you will get a good casserole - use chicken on the bone for flavour; make the liquid tasty enough; cook it long and slowly. Have fun!
