Buffet and sandwich questions

Hi advice please on a buffet for about 40 people was hoping for finger food and paper plates to reduce need for washing up

How many sandwiches per person. Would they be ok being made fri afternoon and wrapped and chilled for sat lunch or are they better made fresh on sat am ?

Any other suggestions gratefully received I was wondering about mini quiches

I think they'll go a bit crispy round the edges if made the night before, fresh made definitely better. As to quantities, it will depend on how much other stuff you're offering, but I'd think two sandwiches per person, assuming there are other things.

Other suggestions: sausage rolls, mini baked potatoes (nice topped with a dollop of creme fraiche and some snipped chives), cheeseboard with crackers, grapes, cherries. You can also do very easy but tasty puff pastry spirals - I think we may have got the recipe from I Can Cook on CBeebies! You spread pesto or tomato purée on puff pastry, add some chopped olives and/or ham, maybe some grated cheese, roll up then cut into slices (like savoury Swiss roll) then bake. Also, rather than just sandwiches, if you can get some mini rolls to fill, that's nice for a bit of variety.

The puff pastry spirals sound ace. It's supposed to be like an afternoon tea so I think sandwiches maybe some different types of bread sausage rolls pinwheels and loads of cake

I love little jackets but really limited for oven space would the pinwheels be ok made night before

Scones would be nice too and you can make them beforehand and freeze them. You could make savoury ones like cheese, olive, sundried tomatoes and also sweet fruit/cherry scones. They're really filling too which is always good.

You could make a load of savoury and sweet muffins too, they freeze well and can be defrosted in the morning. Thing about lots of sandwiches is they take forever to make and they start to look a bit raggedy quite quickly which is a shame after the effort of making them
