Can I parboil potatoes, parsnips and carrots today for roasting tomorrow?

I wouldn't. Peel, chop, and leave sitting in cold water in the saucepan -that'll save you a load of time and mess on the day, but parboiling would be a step too far IMO.

Potatoes are really good if you parboil, freeze and cook from frozen. Very crispy and tasty. Don't know if it would save much time, though.

Yes it works. Parboil then place in ziplock bag in fridge.

I've parboiled potatoes and parsnips the day before, then put them in a dish ready for roasting and put in fridge overnight. I think it's a good idea, saves time and mess on the day.

I always do that with spuds at Christmas. With carrots and parsnips I would just peel and shove them in a zip lock bag.

Yes to potatoes and snips. You will get crunchier roasties if the spuds are dry.
