Ideas for a simple pudding that could be prepared a week in advance please..

Quite specific I know!
I am a scout leader, currently with a grand total of 2 scouts :) At the moment we are working in our chef badge, part of which involves planning and cooking a 3 course meal. We have access to a lovely kitchen in the village hall and I can supply any equipment that is not provided. However as there is only the 2 of them and we have limited time I am after a pudding that can be prepared the week before and them frozen or chilled till needed.
I am completely blank as I tend to cook from scratch as needed and also need to take into account their inexperience :o

You could make a ginger parkin, wrap it well in lots of foil and leave it for the week. It improves with time, so should be ideal. Serve it with a dollop of cream.

Christmas pudding type thing - clootie dumpling... cook it one week, eat it the next. Do it in a pressure cooker and you'll be able to get it done during the meeting.

Crumble?

Stew the fruit the week before - then mix up the topping on the night as that is quite quick to do?

I would be tempted to do 'cheating' cheesecakes - digestive biscuit, topped with creme fraiche or frormage frais, then fresh fruit and a dribble of warmed up redcurrant jelly - doesn't take long to assemble and is (fairly) healthy and helps them add another of their 5 a day to the list....

One tin of nestle's caramel condensed milk. One 300ml tub double cream. Large pinch of salt. Whip together til just holding shape. Pour into Tupperware box. Freeze.

Serve with strawberries.

I was watching Nigella Express yesterday, and she did an ice cream cake with crushed bourbons, crunchie and other bits in. Looked absolutely lush, and can be kept frozen for as long as needed

Ice cream would be fun to make ahead? We bought a cheap ice cream maker from lakeland (was on offer, so might have sold out now) which you freeze bowl and then churn yourself, you could even assemble fancy ice cream sundaes on the night of serving? Where are you, i thought scouts were massively over subscribed?

The actual badge requirements state that we need to make two sauces and that the meal should contain a pastry dish or cake. Given the constraints on us I have managed to beg negotiate so that we can make a cake separately (neatly filling the criteria for another badge at the same time!) and make an Eton mess (very easy) or a simple sponge and custard (which covers one of our sauces too) The Eton mess only means that I have to secrete a second sauce in somewhere :)
princess we are in a very small village in Dorset. The Cubs and Beavers ARE oversubscribed and there is a lot of movement between the sections within the next year or so so Scout numbers will rise. At the moment we are recovering from a lack of leaders which has prevented us actively recruiting- full steam ahead now though with the sudden upsurge of interest in the movement :)
