Interesting ideas salmon steaks

I'm in need of inspiration for salmon. I always do either in foil with olive oil, thin slices tomato etc or fry crispy with parsley sauce. Both are noce but I love variety. Please feel free to inspire!

Oh, and DH does not eat chilli/chorizo.

anthony warrel t does some nice barbecue marinades. pesto, breadcrumbs, parmasan mixed and stuck on top. fish pie, or fish pie with breadcrumbs/cheese. i'm really posting so i can also get ideas

I sometimes cut the salmon into chunks and coat in ruskolene, also just cook it plain and melt Philadelphia (with a little milk) to make a sauce to pour over. More often I cook and flake it and use to make a fish pie or add to kedgeree.

We cook a chinese salmon - marinade salmon with ginger, garlic, olive oil, soy sauce, splash of sesame oil and lime juice. Serve with rice and stir fry veg.

I love this marinade: 1/2 red onion, 1-2cm ginger, 1 garlic, 1/2 lime, 1/2 tsp 5spice, soy, little oil. Blitz. Put in oven dish, sit salmon on top skin up & bake. If you oil/salt skin it goes lovely & crispy. Serve with noodles & veg.

Tandoori salmon. Mix some spices into greek yoghurt and slather all over salmon. Serve with lemon rice and wilted spinach.

Wrap each salmon steak in a slice of Parma ham. Brush with olive oil, salt and pepper. In oven for 15/20 mins. Nom.

I mainly sprinkle Cajun spice on fillets and wrap in foil -no oil.

Easy marinade- dark soy, mirin and sweet chilli sauce.

Or dob a bit Boursin on top of the fish, then a basil leaf and wrap in Parma ham.

Or (and I don't blame you if you don 't try this but it's surprisingly tasty!) a recipe from Annabel Karmel - but obviously without the pureeing stage! Grin

Wrap in foil with some cherry tomatoes and pesto sauce and bake for 25 minutes.

Or cherry tomatoes plus sprigs of fresh rosemary and olive oil.

I think salmon goes really well with pulses so I usually griddle it and serve it with either home-made lentil daal or spiced chick peas - just put a selection of spices on a plate (cumin, coriander, allspice, I usually put a good whack of chilli on but you can omit that) drain tinned chickpeas and wash well, then roll them on the plate to coat and then fry them off in a little olive oil. Dead easy (stolen from the Jerusalem book actually now I come to think of it).

When I was pg I craved M&S organic salmon and their lentil daal Grin

WilsonFrickett that sounds lovely, do you spice the salmon as well?

Mix together white miso, ginger, soy sauce and rice vinegar, a few thinly chopped spring onions if you have some, marinate the salmon for an hour or two then cook in a hot grill pan or even works in the oven. Serve with noodles and stir fried greens.

I usually do spice the salmon, we like spicy food! I often smear a couple of spoons of harissa over the salmon, or just add the spices I've used for the peas.
