Quick! How do I rescue my green Thai chicken slow cooker dinner??

At 2pm I quickly cooked off 4x chicken breasts, with a dollop of green curry paste, and chucked them in the slow cooker with 2x tins of light coconut milk and some veg and stuck it on a high and went out thinking "great, there's about 6-8 portions there, easy dinner and lovely stash for the freezer".

Just got home and it's soooooooo runny and bitty. Maybe it's flakes from the coconut milk but it looks vile.

Wish I'd left the lid off so it's thicken up.

DD us getting grumpy coz she's hungry so I'm about to stick some rice on. Can I do anything to improve my curry or is it doomed? Usually I'd stick some flour in to thicken things up but not sure that'll work with this.

Help, don't want to waste all that food!!

It sounds like it might have split / curdled but does it taste ok? My slow cooker thai curry does usually come out a little bitty but tastes nice! Do you have any creme fraiche you could put in with some more paste maybe to thicken? Like you, I am not sure flour would work.
For future ref, make sure you use full fat coconut milk as less likely to split and I would only use one tin.

Can't bear to taste it in case it's gross and it's too late to do anything else for dinner

It has thickened a little since I've been in and taken the lid off. 12 mins til rice done so might thicken a bit more yet.

1x tin barely covered anything (I put in 2x whole peppers, 1x large carrot, 1x courgette and 1x large onion as well as the 4x chick breasts)... Would it still work? And should the lid have been on or off??

I might put in some orange lentils. Not something I'd normally add to Thai food but it does thicken stuff up. Alternatively cut up potato...

Lid on definitely. You don't need much liquid in a slow cooker. I usually add a load of sliced courgettes, a red pepper, sometimes some sugar snaps and a pack of chicken thighs with one tin of coconut milk and there is always plenty of sauce. Its a bit of a leap of faith as you say, it doesn't look like much sauce, but it will be fine. Hope tonight's dinner is ok!

Got any cornflour? Light coconut milk does separate when it boils but if you make a paste with a little cornflour and water it should smooth it out a bit. Also - you could always strain off some of the liquid and thicken what's left.

You could put it on the stove and bring to boil and thicken it with flour/cornflour?

Also could take some of the sauce out too to help thicken it.

Or mix with rice together as a 'thai curry soup'

Pouring some of the liquid out and using it to cook the rice in sounds good to me...

Sooooooo.

It was actually ok. Could've done with a bit more curry paste (ie flavour) but was alright.

Will definitely use full fat cc milk next time and chuck there veg in later as they were all a bit mushy.
