Here are a few ideas, let me know which ones appeal and I'll jot down the recipes:
Prawn and chilli cakes
Bacon, asparagus and spinach salad
Salmon mousse
Mini cheese and tomato tartlets (filo)
Mini quiches (in cake cases, no pastry)
Chicken tikka drumsticks/kebabs
Stuffed aubergine rolls

These are all easy to serve buffet style, but if you're after something more substantial let me know.

Since the weather's nice what about a bbq with things like lamb chops, low fat sausages, chicken kebabs, grilled vegetables and salad. Potatoes,.rice, pasta and cousins cous are all 'free' foods, so you could do a variation of those as salads.

Carrot and cucumber sticks
Spanish omelette - cooked with fry light
Lean meat
Cous cous salad

Avoid bread and fat.

If it is supper for a meal then a roast works quite well; new potatoes and lots of veg.

All meat (as long as fat is removed) is free on slimming world, as are vegies and fruit.

My current favourite is grilled lamb steaks with mint and (fat free natural) yogurt dressing, plain cous cous and a big salad - all free. Desert could be an eton mess made with merange nest, 0% fat greek yoghurt and berries. If you are feeling a bit fancy, you can crumble a flake over the top too!!

nibbles can be chopped veg sticks with low fat dips.

Might be worth asking over on the slimming world thread - I've just made a gorgeous diet coke chicken for dinner :)

With the cruditees you could serve my "syn" free hummus type dip. Bake a small sweet potato, 3 or 4 cloves of garlic, an onion and a red pepper, all wrapped up in foil, for about half and hour at 170 degrees or so. Blend it all up with a drained tin.of chick peas, some coriander leaves and black pepper. Use some of the water from chick peas if its a bit thick.

For pud - strawberries and low fat natural yoghurt? Or onken do a really yummy fat free vanilla yoghurt which is good on fruit.

Main, do her a salmon steak (125g, fairly normal size), rice, green veg, no dressings etc and tell her the salmon is one og het green healthy A choices.

Oh thank you all so much, it's all very strange to me as there seems to be so much meat in it. We don't eat much meat in this house (I'm vegan, DD veggie and DS & DH go with what we eat most of the time) so need to really think this one through :)

SW relies on eating lots of veg, so you'll be fine with veggie food. As long as you don't use too much cheese or oil she'll be ok.

If you're using cheese, use lower fat versions (I use a lot of low fat feta or halloumi), so couscous with roasted veg and a bit of feta crumbled over, veggie kebabs with chunks of lower fat halloumi etc will be ideal.

Pasta with summer veg, lemon and low fat philly or quark to make a sauce would be good too.

Spanish omelette or frittata with potatoes, courgette, tomatoes, mushrooms served with an undressed salad (serve the dressing on the side).

What Ophelia just said!

My SW christmas dinner was a big.plate of roast veg - beettoot, fennel, spuds, jerusalem artichoke etc cooked with a tiny amount of olive oil and rosemary.
