What is your favourite vegetarian recipe?

We are trying to change our diet so that it is not so focused on meat. I struggle for inspiration for vegetable based dishes though (although we are working our way through H F-W's veg book!).

Just wondered if anyone could recommend anything tasty? Thanks.

Freezes really well too so worth making a batch! I don't add the cider though and find it liquid enough with just the quantity of stock stated in the recipe...

I like sweet potatoes with goats cheese and sundried tomatoes. It's very easy just prick potatoes, rub in oil and season and bake for about an hour (just like a jacket) then slice goats cheese cut in half add goats cheese and tomatoes and grill for 5 mins or so.

I've not been v impressed by HFW's book tbh.

Things that the dds particularly enjoy lately are:

Dhal, rice, salad (not HFW's dhal though, because it's hideously bland)

Chickpea, sweet potato and spinach curry

Tacos made with vege and mixed beans

Any stir fry combo with rice or noodles - use tofu, cashew nuts or omelette strips for the protein

Try making mashed potato with a mixture of normal and sweet potatoes, or with some swede. Tastes lovely and gets you an extra portion of vege in without really noticing!

I love Involtini from Nigella How to Eat, aubergine rolls with tomato and mozzarella. I have just had a Caponata sandwich which was pretty tasty and last week made Aubergine cheesecake which was yum. so thats aubergine covered! I had a good book called More veg less meat and there were good ideas in there more about making meat go further, a really nice chickpea and chorizo stew

Lots of Italian food, like

  • spaghetti with home made tomato sauce (onion, carrot, celery, tomatoes or Cirio canned tomatoes) with Parmesan cheese
  • penne with sautéed onion and broccoli
  • penne with sautéed onions, leek and broad beans
  • parmigiana
  • devil's tomatoes (hollowed out beef tomatoes filled with egg and cooked in oven in a tomato sauce served with rice)
  • risottos eg with peas or mushrooms etc
  • minestrone
  • Tuscan bean soup

Alternatively:

  • lentil stew (green lentils, onion, leek, potatoes, celery served with flatbread)
  • also apple beanpot
  • pancakes
  • vegetable soup
  • quiche
  • cheese omelette filled with mixed vegetables

And of course home made curries with tofu (tofu really goes well with curry as it absorbs the flavour so well).

Home made pizza (Margarita or Quattro Formaggi or Quattro Stagioni or just mixed grilled vegetables on tomato base or white base)

Paneer is brilliant in curries - cut into cubes and fry it then stir into the curry just before serving.

Yes paneer! Dh makes it himself, google it, really easy. I would also recommend ottolengi (sp?)'s tofu and pepper dish, only put about a tenth of the pepper!

May I recommend David and Kay Canter "Cranks" recipe book and Dublin's " Cornucopia". Both these books stem from 1970s ( stay with me) restaurants that were popular for over 30 years. The recipes are original , unfussy and all deliver. The Cranks might be found on eBay as quite old. The authors were the original vegetarians back in the days when you couldn't buy chickpeas in tins! I love them.

scuttlebug I recommended the Cranks cookbooks as being my go to recipe books for soups and savouries on remuslupin's thread. I don't know anyone else who uses them Smile. My DH loves their homity pie.

I love Ottolenghi's food so will definitely have a look at that and will start getting all these in to the meal plan to try them out! Ta.

greenhill ah homity pie rocks! I find the cranks soups brilliant too! The cornucopia book might be good to use too, its more modern but with the same ethos as cranks.

My mum used to make Homity pie for me growing up, great with a great salad.
