How to make flapjacks please!!

Am looking to making flapjacks !! For the first time!!

Google Felicity Cloake flapjacks. She is my recipe guru and this one is particularly fabulous.

My recipe (sorry about the mixed g and oz though)

In a small saucepan put 300g of butter and 7oz golden syrup and melt over a low heat (don't boil).

In a large bowl weigh out 18oz (1lb 2oz) of porridge oats and add a pinch of salt.

Pour melted butter and syrup over oats, and stir until oats are all covered. (If you like you can add cut up cherries/chocolate chips at this stage).

Tip into a rectangular tin (8" x 10"ish?) and press down well with a metal spoon.

Bake at 180 (fan oven) for 20-25 mins.

Remove from oven, cut into squares and leave in tin to cool.

When cool turn out and enjoy!

200g butter
200g Demerara sugar
Few tbsp syrup
240g oats
Dried fruit if wanted.

Pop butter sugar and syrup into LAN and simmer gently. Add oats and fruit. Pad mixture down in a Pre greased tray. Bake for 35m

I have to experiment a lot, sometimes my end product is too crumbly / too hard but if I mess up I never throw away I use it with Greek yoghurt for breakfast, its lovely!

You must search on here for "soupdragon's flapjacks" (Soupdragon being the poster). They are AMAZING and work every time. They are now my standard flapjack recipe. The secret is that they use condensed milk...

Mine is from my dm, who makes the best flapjack ever. It's basically the same as flat's, but substitute dark muscovado sugar for the demarara, and omit the syrup.

Also, I think I use a few more oats to soak up the mixture. And, add the dried fruit (gotta be chopped dates for me) early on so they soften a bit.

Mmm, might have to go and make some now, I'm hungry...

Add a small pinch of salt to the oats, and a squirt of lemon juice to the butter/golden syrup- delish! This is what my gran and mum used to do and it works. Also, if you like, add chopped hazelnuts, dried cranberries and/ or currants. Yum. Hungry now...

Here is Soupdragon's (copied from a previous post of hers):

250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
tablespoon or so demerera sugar (optional)

baking tin, no bigger than about 18cm x 28cm

Method:

  1. Preheat the oven to 160 degrees c
  1. Line the baking tin with baking parchment.
  1. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
  1. Add the condensed milk and mix. Bring to the boil for about a minute.
  1. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  1. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  1. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

I leave out the demerera entirely (as she advised on subsequent posts) and it's still pretty sweet.
