How many meals for 2 people can you make out of a whole chicken?

I need three different meals. Is it possible? 1 will have to be a roast.

Split it into 2 breasts, 2 legs and wings, peel off any extra meat you can get to.

You don't need a whole chicken breast for 2 people on a roast, plenty of other stuff on the plate, just slice it up and share between 2.

Then you could maybe do chicken fajitas, chicken pasta bake, chicken curry, chicken and veg pie, chicken omelette, chicken risotto, stir fry, chicken and chunky veg soup...

I can do 3 meals for 4 people from an average size chicken.

Roast chicken on day 1.

chicken risotto or pilaf on day 2.

And chicken noodle soup on day 3.

I haven't chopped a raw chicken up before, LTB Blush. I'll give it a shot. We're trying to stick to a budget this week so this chicken has to last.

I didn't say raw Grin so easy to get every bit of meat off the chicken if you slow cook it, the bones literally fall out of it.

Remove breasts use for curry or pasta dish, roast bird, then boil up carcass for soup i can make a small chicken last three or four days

I often buy a small/medium free-range chicken and get at least three meals out of it, for two adults and one 2 year old.

Day 1: Roast with trimmings
Day 2: Chicken and veg pie, or chicken pasta
Day 3: Risotto made with shredded chicken, leeks and peas
Day 4: If you like you can use the carcass and any leftover scraps of meat to make a stock/ soup with lots of vegetables, and then serve with some nice bread or cheese scones (I don't usually get round to this!).

DH roasted a big chicken (2kg+) for lunch today - Meal #1 for 4.

Tonight's dinner (Meal #2 for 2) - Thai chicken salad.

Tomorrow's lunch (Meal #3 for 4) - Vietnamese spring rolls.

If there is more leftovers we'll stirfry with ginger and soya sauce.

Chicken and mushrooms in white wine sauce, serve with rice or use in a pie or fill pancakes with mixture, or serve with pasta.
Chop up cooked chicken and use in risotto, good with peas mushrooms and leeks.
Make a stock with the bones, then a veg soup to use up any leftover veg, use pulses/beans to make it a filling meal.
Use any shreds of chicken in an oriental style broth with noodles and veg, good for a quick lunch.

Wow. DH and I must be really greedy. Between the two of us, we can only stretch a small chicken to 3 meals, and the third is soup (first two are roast, then usually curry)...

We can make a chicken stretch 4 days if it's just me and dp, 3 days if dsc are here.

TBH, I think I'd freeze a meal's worth of roast chicken in gravy for a quick and easy roast meal one evening - I think I'd have run out of steam after 3 days of chicken.
