Unusual biscuit ideas/recipes

Anyone?

I teach GCSE Food Tech and this years exam paper is on special diets and biscuits (I'm not giving away anything top secret by saying that btw!). I'm trying to get my class to think of unusual flavours of biscuits they can design as part of their paper but they are really quite basic with their ideas. I thought I'd make some unusual flavours of biscuit at home for them to taste in class next week in the hope if they've tried them they will be more likely to remember them and use them in their exam.

Any ideas? I need relatively cheap and very quick and easy to make ideas as I'm pushed for time.

What about Chai Masala flavour or cardamom and orange or pistachio and honey?! All have recipes if you google, can't link as on phone.

I make cheese biscuits and cut them out with a foot shaped cutter. DS (4) loves Cheesey Feet! < not helpful>

hanging I had spotted that recipe and it looks lovely but too much faff for this purpose (might save it for trying at home though!).

One of the students is obsessed with millionnaires shortbread. I know this isn't that unusual but as one of my ideas I thought I might make 2 thin smallish round shortbread biscuits, sandwich together with some caramel and then dip in chocolate. It actually sounds delish to me Grin I should write a recipe book

bike oh if only I had a food biscuit cutter! I love that idea

Anyone got anymore interesting flavours? I have made lemon and basil shortbread and just about to put fennel and orange in the oven, but am searching for further interesting tastes...

You need go no further than googling Japanese kit-kat. Among others there are Wasabi, Red bean, Purple sweet potato, they used to do a red wine kit kat.

Childminder makes wonderful " afternoon tea" ones: earl grey and strawberry.

Rhubarb and ginger. Courgette and ginger. Black treacle and ginger.

Cheese and marmite. Cheese and pickle. Anchovy. Mushroom/ mushroom and bacon " the breakfast biscuit ".

Mango chutney. Yum, sweet and spicy.

Mulled orange, using the spices you would use for mulled wine.

Would the emphasis not be on catering for 'special diets' rather than exotic flavours? I'd rather eat a really good chocolate, gluten-free, vegan biscuit than a bad lavender and wasabi one!

Caramel shortbread made with white chocolate, with some black pepper through the white chocolate. Then freeze them to be eaten from frozen-ish. Both black pepper and freezing make white chocolate less sickly, and you can talk about the effect of serving temperature on taste and texture.
