Cookery bookclub - May - Jerusalem by Ottolenghi and Kitchen Diaries I by Nigel Slater

Come join the Mumsnet cookery bookclub! Each month we choose two cookery books - one popular, like Nigella / Jamie / Delia, so you probably already have it / can borrow it and one a bit more unusual. We cook a minimum of two recipes each - you choose the recipe, they just have to be ones you have never cooked before- which works out at four new recipes each month. Then we chat about them!

To see our April thread about Feast by Nigella and the Smitten Kitchen blog / cookbook, click here ... This thread is still live as we're quite taken with these books and are keeping on going!

For May, our books are:

  • Jerusalem by Ottolenghi
  • Kitchen Diaries
and we'll post on this thread.

For June our books will be

  • Mexican Food Made Easy by Thomasina Miers
  • Thirty Minute Meals by Jamie Oliver

We will always try to pick at least one book with recipes available on the Internet, and local libraries are great for cookbooks if you can order in advance, so don't be put off if your cookbook collection isn't threatening the foundations of your house extensive.

We have veggies, low carbers and 5:2ers on the thread so this is very diet compatible! Although I refuse to take any responsibility for cake-induced weight gain (even my own).

I used a hand held blender with chopper attachment aka then ground it further with a pestle and mortar. My ancient old moulinex stand blender had a separate coffee grinder that was great for spices. You could always do it the old fashioned way and put in a sandwich bag and beat with a rolling pin. Obviously none of this is helping if you only have ground spices though, if so I would halve quantities. It is very aromatic though so I wouldn't just assume you have too much. :)
Couscous, tzatziki, greens with tahini sauce would all work well. Think we had cardoman basmati rice and tzatziki with ours.

karmakameleon · 23/05/2013 20:03

We had the dal and pumpkin soup from KD last night. Nice but not as good as the spicy pumpkin soup with bacon, also from KD, that I usually make. May switch between the bacon topping on that one and the fried onion one for when I fancy something vegetarian.

Also managed to make the tahini cookies. Loving them, they are very moorish.

Btw glorious if you're looking for swede recipes you really should try H F-W's swede and potato pasties from the Veg Everyday book. They were a big hit in this house.

glorious · 23/05/2013 21:22

Oh thanks karma we'll give them a go. I sometimes make traditional pasties so it's worth a go. Hopefully swede season is finally over though...

snoworneahva · 23/05/2013 21:34

Tonight we had Braised eggs with lamb, tahini &sumac and Roasted aubergine with fried onion & chopped lemon. Both dishes were tasty, dh like the eggs best, I liked the aubergine best - both were well flavoured and pretty straightforward - will definitely make again.

maniacbug · 23/05/2013 23:30

Evening all! I have just had a big thread catch-up, as our phone and internet were down for over a week (due to fallen tree on line). Once I'd got past the frustration of the first couple of days, I decided to embrace it and spent my evenings making jam and cordials, knitting and reading Actual Books. Oh, and lots of menu-planning! As well as starting to work my way through the wonderful Salt Sugar Smoke, I went a bit Jerusalem-crazy: we had the turkey + courgette burgers (DCs loved them; I loved the sumac sauce, but did find them a bit rubbery when I ate them out of the fridge the next day. Would try to avoid having leftovers next time), and the shwarma - amazing! (akarucker DH made pittas but we scoffed them all for brunch so had it with skinny fries, houmous, a tomato/cucumber/parsley/lemon salad and pickles, which seemed to work pretty well; also, re. spices - my spice grinder is in a box somewhere in transit from our old house, so I just used the pestle and mortar. Was surprised at how easily it all ground down, particularly the cinnamon stick and star anise. I did have arm-ache for a while afterwards, though.) Also had a lovely meal of butternut squash with red onion, tahini + za'atar together with the chermoula aubergine. I thought they complemented each other really well, and also realised afterwards that if you omitted the yoghurt it would make a delicious vegan feast. Will definitely do again when I have visiting veggies.

Poor old Nige hasn't had much of a look-in over the last couple of weeks, though I'm planning his aromatic ribs and orange + lemon cheesecake this weekend. Oh, hang on, actually I did do his fromage blanc with strawberries after the shwarma, and it was perfect. Hardly a recipe at all and I usually have cream, Greek yoghurt, eggs and icing sugar kicking around, but it would never have occurred to me to combine them in that way. Definitely a good way to round off a spring/summer meal, with minimal effort!

tigerlily and xiao I agree, the KD spag bol is a winner (though with a fraction of the butter he uses). I know it by heart, and regularly fall back on it when the DCs have friends over. They have already said they want me to include it in the 'family cookbook' I will compile for them when they leave home (NB: they are 8, 6 and 3).

Jerusalem meatballs with broad beans and rice/orzo on the menu tomorrow night, and planning on the braised eggs and roasted aubergine with fried onion + lemon at some point this weekend... I was going to do them for separate meals but now tempted to make them at the same time, snow did you think they went well together?

Um, what else... Zuleika I also picked up my copy of Jamie Oliver from the library, and was pleasantly surprised when I looked through. Don't think I'll have any trouble selecting my June recipes! Might have to boycott the cassoulet though, due to the strength of my objections to the word 'kinda'. (Hasn't he grown out of that yet?)

PS The Pig... I thought it was a beautiful setting with a great atmosphere, and it was a lovely evening due to the company (and perhaps a couple of bottles of Pinot Noir rose Grin)... but have to confess I was a teeny bit disappointed with the meal itself. It was all perfectly fine, just not very... exciting. Don't let me put you off, though! We might just have chosen badly, and felt a little rushed because we had an early sitting. The overall experience must have been worth it, as we all agreed we would happily stay there for a week!

snoworneahva · 24/05/2013 06:54

Hi Maniacbug I had the Roasted aubergine with the Braised eggs. Not sure I'd put the meat balls with the Braised eggs - a bit too meaty maybe.

Loving this thread, my copy of Jerusalem is looking well thumbed now, and I'm eagerly anticipating next month's books. Concerned though that Jamie is a bit too carb focused for me to want to buy the book, so I might just stick with Tomasina to begin with.

maniacbug · 24/05/2013 07:13

Sorry snow, that's what I meant, the aubergine and eggs together, definitely not with the meatballs!

DH has asked me to ask if anyone has done the maqluba from Jerusalem yet? (He wants to know where he went wrong.)

snoworneahva · 24/05/2013 08:17

Maniac I think they worked together but it needs something acidic to balance out all the oil. We served it with a lemony coleslaw because it needed to be used up but I think tomato and cucumber salad with a lemon and coriander/parsley dressing would work better.

akarucker · 24/05/2013 17:26

I wonder I someone would be kind enough to do me a pumpkin weight favour, next time you cook it. Because some of KD recipes call for pumpkin, I use canned pure pumpkin purée instead. However, the weight is obviously for cooked weight on the can, but recipe weights are for the weight pre-cooked.

Pretty please could someone weigh their amount of raw pumpkin called for in a recipe, and if possible (if it's cooked seperately), could you weigh it after so that I can convert my amounts correctly. I keep guessing and it's making a difference to the taste.

BTW - I hope this isn't a stupid question - I'm just assuming that raw vs cooked will be different!

Thank you!

minimuffin · 24/05/2013 20:44

Very late to this month's thread and I've only cooked from KD so far (which is one of my top 5 cookbooks ever anyway, and I bought it when overdue with first baby and cooked from it every day until he arrived, 11 days late, and again postnatally on valentines day when i first felt like life was vaguely under control again, so it holds a v special place in my heart!).

Going on recommendations up thread I've made the lemon basil linguine (easy and delicious, and what I thought was far too much Parmesan just melts away). Today I made the bolognese sauce - thought it was easy to follow and really good. Went down a storm with the DCs and it can almost touch DH's recipe for greatness - that's saying something. Made the zucchini ('courgette' too humble nige?!) dill and feta cakes too - they were great but i didnt follow his method as it was going to end up as scrambled eggs IMHO. I also want to try the brownies and double ginger cake... and pretty much every other recipe in the book. I love it. Anyone tried the ginger cake (january) actually - is it as good as it sounds? Haven't read whole thread yet

My staples from KD are the grilled chicken with Harissa and mint (June) - we LIVE on this in summer. So easy, brilliant on the barbecue, almost like tandoori chicken. Pumpkin & tomato laksa also a regular one. And the chicken with mustard seed and coconut milk is our homemade curry standby - it's bloody gorgeous.

So Jerusalem gets rave reviews - we're going on hols next week so I probably won't get chance to try the recipes in May but will def try to find some online and try out over summer. If it ever comes. Still waiting to feel like cracking open a bottle of rose that's been chilling in my fridge for well over a month now... Thanks for all the suggestions and inspiration - I love this idea tiger!!

VivaLeBeaver · 25/05/2013 14:36

I made the marmalade cake from Kitchen Diaries yesterday and took it into work where everyone loved it. Really nice cake with a gentle flavour.

I've ordered the Mexican Food book from the library, someone has it on loan and its overdue so I hope they return it soon.

TheRealFellatio · 25/05/2013 16:02

I love my Jerusalem too, but cooking from it will be limited I suspect, as my DH is also not keen on aubergines, pumpkin and squash, feta, courgettes, and he's fussy about lamb.

I adore arabic and middle eastern style food so left to my own devices I'd eat masses from it quite happily.

akarucker · 25/05/2013 18:21

We just had the lamb shawarma! OMG - absolutely delicious. Scrumdiddleumptious in every way.

Pantah630 · 26/05/2013 13:04

Knew you'd love the shwarma Grin

I've just made the tabbouleh from Jerusalem, with twice the bulgar wheat as I prefer more of that than parsley and a mix of dried and fresh mint as my mint has yet to flourish in the garden. It's still delicious, pleasantly acidic so should go well with my pork steaks I hope.

kefybaby · 26/05/2013 14:07

I made the beetroot and yogurt dip yesterday. It was lovely, although a tad too garlicky. I fancy making one of the meatball recipes next. They all seem very yummy.

VivaLeBeaver · 26/05/2013 15:17

I'm going to make the lamb sharwarma this week, sounds lovely.

Cherrypi · 26/05/2013 18:04

I've just made the spice cookies from Jerusalem which are a lovely flavour but I got bored grating the chocolate and just put it in as big chunks which has affected the texture. Gallettes are in the oven and look ok so far.

Curioustiger · 27/05/2013 10:50

Hello all! I'm quiet as I'm on holiday in the US - I thought I'd have Internet access but no, my iPhone didn't work at all until I arrived somewhere with free wifi! I'm afraid my recent meals have been ... Err... Pizza, crab cakes, a club sandwich and a Cobb salad, and I didn't make any of them myself! But it's all very delicious if enormous.

I can't contribute much to this thread now so will just mark my place for more suggestions. Get ready for next month's thread which I will set up shortly!

OP posts:
Cherrypi · 27/05/2013 12:39

The galettes were lovely. Husband said they would have been better with bacon in them. He even commented they were the first of my cooking experiments to turn out like the picture. The spice cookies taste like maya gold bars on biscuit form.

maniacbug · 27/05/2013 14:42

May I humbly present DH's chocolate krantz cakes (Jerusalem). Seriously, LUSH!

(Out of interest, anyone else's DH always compelled to pick the most complicated recipes they can find in any given book?)

I was very happy with my zhoug yesterday. It was like a fresh, green harissa, and I'll definitely be making it again.

Think I'm just about done with Jerusalem for this month. Need a little break from all the olive oil: I have put on 3lbs, despite diligent 5:2ing! (To be fair, I have also just discovered elderflower + lime cider so that may be a contributory factor...) I might just have to make a final exception for the spice cookies Cherrypi - I have had my eye on those for a while, and your description is v. convincing!

One thing I really do appreciate about this idea + thread is that it's had me trying DCs on a number of things I wouldn't normally expect them to like. DS2 (3) loved the tahini/yoghurt dip from the braised eggs + lamb, and they all loved the broad beans in the meatballs and have been remarkably tolerant of all the herbs. The eldest two even tried and professed to like the zhoug, though I suspect there might have been an element of bravado involved.

maniacbug · 27/05/2013 14:52

Err, sorry, that photo link doesn't appear to have worked. Trying again...

maniacbug · 27/05/2013 14:52

OK, giving up!

ELR · 27/05/2013 16:15

Hi everyone, just had a mass of family turn up so I made the fish cakes in tomato sauce very nice I added some capers to it too and I didn't gave any white wine so used port but it was a really nice recipe.
tiger was wondering where you were, I'm also done this month as going to Croatia in a few hours so will see you all in the June thread. Enjoy the rest of the USA.

Kneedeepindaisies · 27/05/2013 19:56

We had the turkey burgers from Jerusalem again today with Na'ama's Fattoush.

It was very nice but I didn't need the sumac sauce with the burgers as the salad dressing was similar.

Hoping to do tahini cookies this week then will probably be done.

glorious · 28/05/2013 21:27

Definitely do the cookies daisies Smile

I've ordered next month's books from the library and started getting excited.

Slightly off topic but we had the lamb and pistachio meatballs from the Polpo cookbook (London restaurant) tonight, they were good. Too many meatballs recently though! It's a lovely book.
