Something for my tea - I have 3 pieces of lovely fresh cod loin - now what?

Need something quick and simple for tea tonight. I bought three lovely fresh cod loins yesterday. I'm a hopeless cook and not sure what to do with them next. I usually fry them in a bit of butter but they end up breaking up all over the place. Need something child friendly too - they have having fish too.

Any suggestions?

Cheesy Crunchy Cod Loin Filets

4 Cod Loin Filets
3 Tomatoes, sliced
75g Wholemeal Breadcrumbs
75g Grated Mozzarella
2 Tablespoons Chopped Fresh Parsley
2 Tablespoons Chopped Coriander
1 Lemon
5ml Sunflower Oil
Salt and Ground Pepper

Lay the cod loins in an ovenproof dish. Evenly cover with mozzarella and arrange the tomato slices on top.
Mix together the breadcrumbs, parsley, coriander, sunflower oil, seasoning, the zest and juice of the lemon.
Spoon the crumb mixture over the filets and bake in a moderate oven for 15-20 minutes, if required, place under a hot grill to finish crisping the crumb. Serve one cod filet, with the crumb on top, on a bed mixed of seasonal leaves.

Bake them in foil in the oven - with just a little bit of oil and some herbs. If it's for the little ones make some cheese sauce. That's always yummy. Check the loin well for bones, they tend to lurk well into the fish. Sounds great, making me hungry and it's only 10.42 here MST .

Cod Loin with a Herb Crust

Serves 4

4 x cod loin fillets, skinned
oil for light greasing
125g fresh white breadcrumbs
grated zest and juice of 1 lemon
4 tbsp chopped flat-leaf parsley
2 tbsp chopped chives
2 tbsp mayonnaise
1 tsp Dijon mustard
salt and black pepper

Preheat the oven to 220C/425F/gas mark 7 and lightly grease a shallow baking dish. Lay the cod in the dish.
In a small bowl, toss together the breadcrumbs, lemon zest, juice and herbs. In a separate small dish mix the mayonnaise and mustard, season with salt and pepper, then spread evenly onto the cod.
Top with the breadcrumb and herb mixture and bake for 18–20 minutes or until the fish is just done and the crust golden and crunchy.

Cod wrapped in bacon with tarragon sauce

(serves 1)

Ingredients
2 slices of bacon
½ cod loin (approx 150g/5oz)
1 sprig of fresh tarragon, chopped
½ lemon, juice only
salt
freshly ground black pepper.
2 tbsp olive oil
For the sauce
1 lemon, juice and zest only
½ glass white wine
1 tbsp tarragon, chopped
120ml/4fl oz double cream

Method

  1. Lay the bacon on a chopping board and use the back of a knife to stretch the bacon out to approximately double its original size.
  2. Squeeze the lemon juice over the fish, sprinkle with the tarragon and season well.
  3. Wrap the bacon round the fish.
  4. Heat the oil in a pan, rub the oil on the bacon and fry for 5-6 minutes turning regularly.
  5. To make the sauce, add the wine to a pan and simmer for two minutes.
  6. Add all the other ingredients and stir through.
  7. Bring to a simmer then serve with the fish.

Pan-fried cod with a warm tomato and avocado salsa

Serves 1

Ingredients
For the cod:
225g/8oz cod loin, skinned and sliced
1 tbsp olive oil
salt
freshly ground black pepper
For the salsa:
1 tbsp white wine vinegar
1 lime, juice only
5 cherry tomatoes, deseeded and quartered
½ avocado, peeled, stoned and chopped
1 tsp fresh chervil, chopped

Method

  1. Heat the oil in a medium frying pan.
  2. Pan-fry the cod slices for 5-6 minutes or until cooked through.
  3. Add the white wine vinegar and lime juice. Cook for a further 30 seconds.
  4. Remove the fish and place on a serving plate.
  5. Stir the tomatoes, avocado and chervil into the pan until warmed through.
  6. Place the warmed salsa on the fish and serve.

wrap in foil with some butter (squeeze on a bit of lemon juice if you are feeling adventerous) tastes wonderful on its own Grin

Yum - these all sound lovely. Dh and I would eat all of them (not at once I hasten to add!) but not sure dds are going to go for them. They are fussy little eaters. If they see herbs on there dinner they won't touch it.
I might try cooking it in the oven instead of frying it. Anyone know how long it takes and what temp in electric oven?
