Why is there so much salt in everything?????!!!!! Potato receipes please!

It is astounding.

When I work, I find it really hard to get tea on the table in 15 mins (sometimes less).

I get in at just before 5 and my girls get in just after and DEMAND my attention, in a whingy whiney way, so it is all I can do to shove something in the oven.

I make all my own stuff and they love the sort of 'baker' chip things I make - just potatoes chopped into eight, olive oil, then baked. BUT these take at least 30 mins or so.

SO. Off I go to M&S to find an equivalent to shove in the oven but one portion of chips or croquette (??) things contains nearly 1g of salt! Surely this it too much for a 20 mth old and a 3.5 year old.

Or should I just get a grip and serve them?

Or do you have any pototoey type things I can make in no time at all (mash and boiled - will not eat).

Jacket Spuds microwave for 5 mins, brown in oven for 15?
can you par boil your wedges? probably won't take much time off tho.....
Parboiled spuds then chopped small and fried in herbs/spices?

mash in advance - do a huge bath. Let go cold. Shape into anything - stars, men etc. coat in polenta (makes nice cruchy coating). Bake or shallow fry (5 mins frying). Can be made up pre baking/frying and frozen. I love 'em! I also add extra veg sometimes eg carrots, sweet pots but can make the mixture a bit soggy.

Noggermum that sounds delish - maybe with sweetcorn in? - DS is only 6 months but DH will be getting that for tea one night (maybe not starfish or men shaped - then again, why not Smile)

rosti? peel potatoes then grate, squeezing as much water out as poss, then squidge into shapes and fry in olive oil (!) - you can then finish them off in oven for about 10 mins or just cook them on top of stove.

if you chop new potaotes in half or smaller they'll only take about 15 mins.

potato salad could be made thie night before

I love baby baking potatoes done in their skins in the oven with lots of olive oil over them and in the dish too (so sort of a mix between baked and roasted). Again wee bits will only take 20 mins tops and require no looking after.

you can reheat baked potatoes fairly sucessfully too

we do mccain oven chips (especially like the american fries one - nice and thin and crispy) but mine aren't big chip fans. How about pasta or rice?

Normally, if I'm cooking something that takes around 30 mins in the oven, I shove new potatoes in with whatever is cooking. If you cut them in half, they will cook a bit like a roast potato and taste yummy (like the way tassis does them).

what about potato latkes, you can prepare them ahead and just reheat.either fried or in oven, basically grate raw potatoes into a bowl ,squeeze excess liquid out then mix witha beaten egg and seasoning and scoop spoonfuls out and fry in oil,,delicious and great with apple sauce[its a jewish recipe] you could also add sweetcorn if you wanted but i prefer just potato on its own..you can flour if they`re still a bit sticky with too much water

I had a similar prob last night - only 15 mins to get dinner on the table. I cut up some potatoes (just washed not peeled) into little dice (about 1-2 cm cubes), chucked them into a plastic bag with a few herbs (or you could use paprika or other spice) and a gloop of olive oil and shook it all up. Tipped it out onto a baking sheet and baked for as long as I had at Gas 6/200C. I was gobsmacked when they were not only cooked through, but nicely browned and tasted fab! (like iddy biddy chips but healthier).

You could try sweet potatoes -- they cook faster than regular potatoes.
