I have stupidly ordered 3 BAGS on my grocery order rather than 3 potatoes Blush really not sure how I managed that!!

Sweet potato brownies! Seriously good, use good dark chocolate and dark muscovado sugar and they are the best brownies ever!

Whatnameforme · 25/03/2013 16:39

Sweet potato wedges, add little paprika!! Mmmm!!! Very yummy.
Use it for mash?

boardingschoolbaby · 25/03/2013 16:43

You can use them as an ordinary baked potato (they just take slightly less time to cook). They are also lovely chopped up in a curry.

anklebitersmum · 25/03/2013 16:46

Soup? J Oliver does a really good one with chorizo. (really tasty, filling and the kids love it)
Or roasted..they sort of caramelise and are really sweet.

BoBoo · 25/03/2013 17:33

I second the wedges, or I like them in a curry. On the plus side, you will find that they store really well and keep for aaaaages so don't panic too much.

peeriebear · 25/03/2013 17:35

Juggle with them? :o

peeriebear · 25/03/2013 17:36

Also, mashed with ordinary spuds makes lovely mash.

Machli · 25/03/2013 17:38

I just bake them, open, sprinkle on sea salt and a dollop of sour cream. Absolutely delicious.

EggsPressYourself · 25/03/2013 17:38

Sweet potato Spanish omelette

I just substitute them for the normal potatoes in Delia's recipe

Machli · 25/03/2013 17:39

Also roasted for Sunday dinner, with carrots, onions, parsnips etc. all sticky and yummy. Better than normal roasties imo.

Newforestpony · 25/03/2013 17:41

Small dice and add to risotto with leeks.

Here you go

Hugh Fearnley-Whittinstall has a lovely recipe for curried sweet potato soup - in his veg book - new favourite for DH!

MrsBertMacklin · 25/03/2013 17:43

They go well as a side with jerk chicken. Mash with some chopped/minced ginger, squeeze some lime juice into them, maybe add some chilli flakes.

Ottolenghi has a gorgeous sweet potato gratin recipe here

2kidsintow · 25/03/2013 17:44

LOVE sweet potato wedges. Sprinkled with a bit of paprika.

Or chopped up and roasted with other veg to go with a roast dinner.

21mealspluscake · 25/03/2013 18:14

Gorgeous chopped then roasted with ginger and garlic, serve with chicken or pork.

Skip the raisins, though :)

Coconutfeet · 25/03/2013 19:35

Sweet potato falafel

EMUZ · 25/03/2013 19:54

Mash them Smile
Gorgeous with creme fraiche and a little butter

Make crisps out of them?

MarianForrester · 25/03/2013 22:26

I made these the other day and they were unexpectedly delicious www.bbc.co.uk/food/recipes/lentil_croquettes_75719

The sweet potato, spinach and lentil dahl is delicious too.

BlueSkySunnyDay · 26/03/2013 12:42

Thanks - I will print all of these out.

H used some in a lovely stew last night (he says its "stew weather" at the moment!)

Ottolenghi's chilli-spiced sweet potato wedges with a lemongrass-ginger dip are the stuff of date nights round here. Recipe is from Plenty but you can see it here.

BlueSkySunnyDay · 27/03/2013 17:42

Yum - these should all keep me busy!

:)

Lovely baked in their skins then split and filled with a mixture of chopped red onion, coriander, red pepper, feta and red chilli plus a dollop of soured cream.

Great in a curry or chilli. I made this yesterday and it was lovely (but lazy!).

Fry onion and cubed sweet pot. Add curry paste and water and cook until sweet pots are nearly tender. Add 2 tins chickpeas and a load of chopped spinach plus a little tin coconut milk. We had it with parathas and a coconut chutney.
