What to do with left-over leg of lamb?

StuffezLaBouche · 24/03/2013 12:18

I've treated myself as the whole leg was on offer at Tesco for £7 (don't even get me started on the fact that they're usually £20)
Anyway, I'd love to get 3 or 4 meals out of it and I'm only cooking for me. I'd kind of like to get away from the stew type things, delicious as they are.

I do love bread making - perhaps some kind of flatbreads?

Don't know about breads but 2 weeks ago I made lamb curry from leftover leg, it was nice.

Shepherds pie?

FrimFrimMcWeasel · 24/03/2013 12:47

Simple but delicious cold slices of lamb with mash n pickles.
Curry
Shepherds pie - michel roux jr did one with roast lamb the other day on the telly will see if the recipe is on the site
I often use meat leftovers in stirfrys obviously it's already cooked so just put in near the end to warm through
Japanese soup noodles involve previously cooked meat we do a shoddy version with miso soup, noodles, cold meat and frozen peas and sweetcorn and stuff spring onions just bung in whatever really

Roux family shepherd?s pie with stir-fried cabbage looks really nice, has a video of him doing it on teh show, and time spent watching michel roux jr is never wasted Grin

moussaka

JamNan · 24/03/2013 13:36

spicy lamb flatbread although I like to use feta instead of yoghurt.

StuffezLaBouche · 24/03/2013 15:01

Oh brilliant, thanks all! I'm going to try lamb flatbread. I do love feta, but happen to have some yoghurt and mint so may use them. Looking forward to them more than the roast now!

rissoles Wink

my mum used to make them with leftover lamb & they were delish, I'll try to find you a recipe

Ponders · 24/03/2013 15:05

\link{http://www.deliaonline.com/recipes/cuisine/european/english/rissoles.html\this is Delia's}

I don't think my mum would have put any spices in, & definitely not garlic, but with lots of seasoning & onion & breadcrumbs they were still v tasty. She made flattish patties, about ½" thick

Ponders · 24/03/2013 15:07

\link{http://www.bbc.co.uk/food/recipes/rissoles_85938\BBC one} - rosemary instead of cinnamon but similar otherwise

A lamb pilaf?

Fry an onion in a little oil. Add rice and stock, a few cardamoms, nutmeg, sultanas. Boil until rice is cooked. Toss in shredded lamb, a handful of peas and some toasted almonds. Serve with poppodoms and mango chutney. Yummy!

Cornish pasty with left over gravy and root veg.
Moroccan rice, with onions peas and dried apricots and spices, you could also do this with cous cous.

StuffezLaBouche · 24/03/2013 15:19

I'd never even heard of rissoles - they look delicious though. Oh god, cornishpasties!!!
Still not made mind up. I'm tempted to delve into the world of pasta making and maybe attempt ravioli... Maybe best to not use my precious lamb on that just yet until I've mastered it..

Michel Roux did his mum's shepherds pie on Food & Drink the other week which looked amazing and used leftover leg of lamb. Here it is, I think you need to mince the lamb though.

StuffezLaBouche · 24/03/2013 15:50

Ah I did see that, it looks absolutely stunning. I love shepherds pie and make it often. Just walked in to the kitchen after foolishly leaving said lamb on side to find this...
Am praying the garlic stopped him actually doing any damage.
