Talk to me about Rocky Road please

Usually I make this by just melting some chocolate and then stirring in broken biscuits, marshmallows, perhaps cherries etc.

But I've seen recipes involving melted butter and golden syrup. Does anybody have the mother of all recipes please?

And do you think a version with salted peanuts would work? :)

I use an Annabel Karmel recipe for fridge cake www.bbc.co.uk/food/recipes/chocolatefridgecake_74814 but add marsmallows and cherries instead of apricot and nuts. It is really good.

I wouldn't use salted peanuts as they are too salty and greasy.

lots of recipes here

Since peanuts are the devils food, no I don't think it would work, but then I a little biased!!!

chickensaladagain · 23/03/2013 20:43

personally I melt chocolate and the throw in malteesers, marshmallows, minstrels and cherries

nom nom

I blame one of the girls from work for that recipe

Thank you. Will try the AK one next time.

I am v fond of salted chocolate and of peanuts, so I thought it might be worth a try?

Nigella's rocky road is my go to recipe- I normally use amaretti biscuits and brazil nuts, pistachios, cherries and marshmallows- i imagine salted peanuts would wprk really well as salted chocolate is YUMMY!

This recipe is great, the dark choc gives an intense chocolate flavour. I add raisins occasionally but the original recipe is hard to beat.

RemusLupinsBiggestGroupie · 23/03/2013 21:18

Thanks all - I can see me making a lot of it over the coming weeks!

Nigella has a recipe which involves chocolate with butter and (I think) golden syrup, then salted peanuts and bashed up Crunchie bars, which sounds fantastic. Haven't managed to make it yet as she keeps scoffing the Crunchies before I get to them ... Grin She has several RR versions which all look good.

I saw a suggestion for using up Christmas leftovers in a newspaper in Jan which was simply melted dark choc spread on baking paper, raisins and salted peanuts sprinkled on top. You might convince yourself this is marginally healthier, I suppose... I like the idea of the salt with all sorts of dried fruit.

eeky · 23/03/2013 21:31

Oh arse bloody autocorrect - dh keeps scoffing the Crunchies; my post reads as if Nigella is doing so. She may well be, but not in our kitchen! However, if she is ever passing our neck of the woods, very welcome to pop in for a coffee and a Crunchie...

RemusLupinsBiggestGroupie · 23/03/2013 21:36

That post-Christmas idea sounds perfect.

Oh dear - mine is an Aussie recipe from SIL circa 1980 and involves lard!

I haven't made it for yonks but it was rather delish so I'm tempted to look it out now.

It has a biscuity base involving chocolate, dessicated coconut and said lard, then cherries etc on top.

hazeyjane · 23/03/2013 21:59

I use the Nigella recipe, using gluten free digestive biscuits, and keep it in the fridge.

I wonder whether replacing some of the butter in the recipe with crunchy peanut butter would work?
