Best family cooker recipes to make and freeze for later please

I have just got my first slow cooker it's a large one 6.5l so I can make and freeze. I'm really hoping it will help my fussy children eat properly. They are 12 and 13yrs and I am stressed at every meal because I'm making 2 separate meals. I thought they would be better when they got older but no sign yet and I often cant think what to cook. My youngest has autism so he hates the chewy texture of meat and isn't good at trying things his diet is very restricted but I'm hopeful that slow cooker food is softer so he might eventually come round to it.
I need a meal plan to get organised.
Please help by posting your best tried tested recipes so I can get cooking!

A favorite here is:
Roast beef in crockpot. Stir together can of mushroom soup, one envelope Lipton's onion soup mix, and one can of water. Pour over roast. Cook on high two hours and then on low five hours. About half an hour before supper, stir in two tablespoons corn starch mixed with two tablespoons water. Makes lots of gravy. Fine with pork chops too, but you should brown them first. My DIL often used to make this when we had flown all day to get there. The aroma is wonderful.

Dahl freezes well and I'm sure it would work in a slowcooker.

I do a slowcooker Shephered's pie filling with Quorn mince, that might be less 'chewy' than real mince. You're welcome to the recipe if any use.

Soup?

Thanks Remus I'd like the quorn recipe I have used that before and it's not as chewy as mince so could be good. I will try beef mince as well because I'm hoping that slow cooking will make it softer for him.

Use fresh quorn mince from the fridge section or defrost the frozen stuff in the microwave a bit before using.

Into the slowcooker put:
a chopped onion
2 chopped leeks
one chopped clove garlic
2 finely chopped celery sticks
4 thinly sliced carrots (if they are big I halve them lengthways first)
the mince
2 tablespoons Bisto
a teaspoon Marmite
some finely chopped parsley and/or rosemary or thyme
a good glug of red wine
about a tea cup of boiling water
lots of freshly ground black pepper
I cook it all day on medium, perhaps adding some more water around lunchtime.

We then transfer it to an oven proof dish and either top it with mash and grated cheese, or top it with shortcrust pastry and bake.
