DS4 is being Baptised on Sun. I happily sent out invites to all the rellies and said lunch at ours after. They are all coming!! Thought I'd do cold meats and salads. Anyone got any delicious, easy to prepare salad ideas? Much obligedSmile

I do a brilliant greek salad if the weather is nice. It is a Nigella recipe that is fab. you can pre-prepare most of it and throw it together atthe end. It also 'lasts' all afternoon!

I would also do a pasta salad, a rice salad, couscous salad.

Couscous salad, get 2 boxes of Sammi's couscous, any flavour, put in a bowl add correct amount of boiling water and cover. Chop loads of cucumber, cherry tomatoes, peppers etc. Once couscous is done (10 mins or so) add veg and mix. You can do this with couscous and roast veg that can be done the day or so before. Chop loads of butternut squash, red onion, courgette, peppers, sweet potatos and roast until soft and yummy. add to couscous.

Pasta Salad with pasta, red kidney beans, sweetcorn, peppers or whatever. Dressing of natural yoghurt mixed 1/2 and 1/2 with mayo (makes lighter dressing than mayo on it's own)

Green salad - open bags, throw in bowl, add chopped spring onions, cucumber

Tomato salad - slice NICE tomatoes, sprinkle with basil;, balsamic vinegar, black pepper and sea salt (and olive oil) Can add slice mozzarella and black olives.

Perfect crunchie - I thought couscous too as a little goes a long way but wasn't sure what to add.

couscous is nice if you add loads of chopped fresh herbs as well as cucumber/ tomato/ pepper / spring onion. whatever herbs you have, or if buying in specially i would go for corriander and mint.

Jamie potato salad with avocado and cress is yummy and v easy, just boil pots add chopped avocado and couple of packets of cress snipped over the top and dressith olive oil and lemon juice (about equal amounts I think) Can do in advance but chop avocado and mix in just before you serve as it can go a bit brown if all mixed toggether and left a while.

I'm watching this thread with great interest as I have a large First Communion party on Sunday, and will be doing salads too. I'm also going to have marinaded chicken drumsticks for the kids, as a lot of them won't eat cold meats, quiche or salad.

tallmummy it is in forever summer.

Basically finely slice a red onion, put in a tub you can seal with about 100ml olive oil, 50 ml red wine viegar, herbs (I use herbs de provance, but oragano is great - fresh if poss) and black pepper. Leave in fridge overnight or for at least 2 hrs.

Then prepare
Cos lettuce broken into pieces, one bulb fennel sliced. 6 - 8 nice medium tomates - slice into 8ths, put in a bowl and sprinkle with a scant tsp caster sugar. (again I do these the night before)

To serve, tip lettuce/fennel onto platter, scatter over tomatoes, crumble one pack feta (she says 400g I think it is too much if you crumble), olives (about 100g). Top with onions and mix (USe hands it is easier)

This amount serves 6 - 8 large portions for a BBQ, 12 - 14 at a buffet, With 45 people I would do 3 lettuces, 3 onions etc

melrose I agree couscous is lovely with herbs, but using Sammys flavoured ones means no need for more herbs! I am lazy.

Tallmummy you want a nice balance between salads with dressing and salads without. If I do a pasta salad, te postato salad I would keep plain IYKWIM, or do bowls of warm new potatos with butter and chive/mint. I can't stand buffets with loads of mayo laden salads

Just wanted to say another thank you for all the excellent salad ideas. The Christening lunch was a great success. I did the Greek salad, the delia rice and pesto, cous cous and a big green salad and the Jamie potato salad. Lots of positive comments from the guests. Thanks again - it really helped me out
