no cook biscuit cake - anyone have a recipie for tonight?

i used to have a recipie for a delicious dessert which i think was made with ginger nut biscuits and cream and you sandwiched the biscuits and cream together and mayybe put something on the top and just chilled it. It was totally yummy with not a lot of work and i want to make it tonight but can't find my recipie. Does anyone know what i'm talking about?

I know I have a recipe my mum used to make in my Cordon Bleu collection but I have to bath the kids now so I'll check later and if no one has it for you I'll dig in out

well I can't find a recipe as such but I would do it this way:

ginger nuts (obviously)
double cream
splash of orange juice
icing sugar
crystalised ginger
booze - whisky or dark rum or even cointreau
serving plate
clingfilm
spatula

In a large bowl beat the double cream till very very thick - like butter
Beat in sifted icing sugar, about 2 tablespoons, a squeeze of OJ, and the booze. You could finely dice the crystalized ginger and add it or save it in big chunks to decorate.
Spread a thick layer of cream on your serving plate the width of your biscuits and as long as you want to make the cake.
Starte spreading and sandwiching and build your horizontal confection.
Finish each end with a coating of cream
Cover with clingfilm, refrigerate, and decroate with crystalized ginger just before serving

Not ginger but is gorgeous and worth a try sometime;

2tbs drinking choc
4oz marg
1 ds of sugar
1tbs
half pound semi-sweet digestive biscuits
1 belgian cooking choc bar
sultanas -to taste

Break biscuits into crumbs
melt marg,sugar,syrupand drinking choc together in a pan-low heat
when melted add the biscuit crumbs mix and stir in sultanas
Grease a square tin and press into the corners well,then level off
melt the choc and cover the base
set in fridge

pelvicfloornomore that sounds absolutely amazing - once i've lost that 10lbs that just wont seem to shift at the moment i shall make and no doubt consume the lot of it!!111

the recipe PFNM posted is lovely with gingernuts rather that digestives :)

I do this sometimes it is called the ginger minge in our house!

Dip ginger nuts in brandy and sandwich together with whipped cream. Top with choc shavings

Refrigerate pref for at least 4 or 5 hrs

The trick is not to dip the biccies for too long, and not to use too much cream

AH of course CD, dip the biscuits in the booze, the key technique.

I can pull recipes out of the air because it's what I used to do pre-kids and I'm training up to be a chef now. Don't have many other RL skills though.
