Low-fat/cholesterol, low-salt ideas for lunch with PIL tomorrow

DPIL are coming to lunch tomorrow. Both of them have high cholesterol, which they are trying to control solely through diet as they don't want to take statins. This means that they eat quite a restricted diet at the moment: no red meat, no cheese, very little other dairy, very low fat, etc - they won't even eat houmous! DFIL also has high blood pressure so we try not to use too much salt (to be fair, we don't add salt to food, anyway). When they come round - which is quite often - lunch is always very informal, so it doesn't need to be anything very fancy. They often bring cartons of fresh soup with them, and we usually do the same, and have it with bread and salad.

DH and I would like to do something different for once, but are a bit stuck for ideas! Last time they came round, we did a chicken tagine with couscous and carrot/sesame salad. Any suggestions for something that we can put together quickly tomorrow morning?

I am really enjoying a kind of homemade coleslaw without the dressing at the moment: my current favourite is carrot, apple and fennel. You could have it with oatcakes and low fat cottage cheese?

Or you could do fish baked in foil - trout is delicious like this - with a drizzle of oil, some halved cherry tomatoes, some herbs, a splash of white wine. Serve with steamed veg or courgettes sautéed in a little basil oil.

Or roast a chicken and serve with spinach, tomato, red onion and avocado salad?

Thanks, lots of good suggestions there. I think PIL would probably be upset by the avocado because they seem to be cutting out pretty much all high-fat food, not just saturated fats. I like the idea of fish baked in foil, though - I'll try it with salmon if I can't find any trout today. Oh, and I'm definitely trying your coleslaw idea for my own lunch on Monday - thanks, it sounds delicious!

How about this Prawn and Mushroom Risotto There's a small amount of parmesan added at the end which you could reduce or omit entirely for the heart patient. Or this Mushroom Curry which is very tasty, contains very little fat and is made 'creamy' by the addition of a little low-fat natural yoghurt at the end. Dress it up with fresh coriander etc.

BTW... if they're serious about reducing cholesterol take your ILs for a nice long brisk walk after lunch. :) Diet only goes so far. Exercise really helps.
