Green peppers - anyone have a great recipe?

I took pot luck on a bag of peppers from sainsburys (Internet shop) and they were (disappointingly) all green. They're my least favourite and I don't like them raw and neither do kids. Is there anything delicious I could do with them?

Make chili con carne or some other Mexican food. When I make fajitas I always fry up an onion and a green pepper as one of the fillings.

Do you live near me? I'll swap the reds in our mixed bag with the greens!

DH uses green pepper in chicken and black bean sauce, sweet and sour - basically all his chinese cooking.

This Levi Roots recipe for Hot Prawn Curry contains green peppers and it's absolutely lovely. Green peppers are fairly acidic but they balance out with sweet prawns really well. It says '1/2 pepper' but I put extra ones in.

I know you said you don't like them raw but this is something I do sometimes.

Chop a pepper or two and a tomato in to small pieces, add a can of drained sweetcorn, some shallots or spring onion, mayo and seasoning. I use garlic granules and fresh ground black pepper, paprika. No salt usually required as there is enough in the mayo. Quantities can be adjusted to suit.

Doesn't last long in our house.

slice thinly and fry in olive oil 'til v slightly burned. Add garlic for last 60 secs. Oily and garlicy cooking transforms them.

They're always good in stir fries, curries, spag bol, chilli etc and other strongly-flavoured dishes. Also a nice one is to fry with some mushrooms and garlic, add cream, black pepper and white wine to make a nice sauce and serve over tagliatelle or spaghetti.

I like them in ratatouille too, and you can make a nice meal by making ratatouille, topping with mashed potato and baking like a shepherd's pie.

However you'll get sick of them if you don't like them much anyway, so I'd do a couple of these ideas, chop the rest up and freeze, then you can chuck a handful into curries/stir fries/spag bol when you make them in the future.

Cut in half lengthways, remove seeds. Blanche in boiling water for a couple of minutes, then arrange in an oven proof dish. Add a teaspoon of pesto, any cooked rice or cous cous which needs using, half a cherry tomato, an olive, cheese (mozzarella or feta if you have it, grated cheddar if not).

Cook for about half an hour in the oven. Serve with salad & potato wedges or as part of a buffet.
