...and in my opinion it is NOT Nigella's everyday brownies, did those last week and they were very 'meh'.

Ingredients
Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup granulated sugar, sifted
1 cup muscovado sugar, sifted
8 ounces melted butter
1 1/4 cups cocoa powder, sifted
2 teaspoons vanilla extract
1/2 cup plain flour, sifted
1/2 teaspoon salt

Directions
Preheat the oven to 150 degrees C. Butter and flour an 8-inch square pan.

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.

Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

140g dark chocolate
225g butter
450g sugar (I use half golden caster, half light brown)
5 eggs
110g plain flour
55g cocoa powder

Melt the chocolate and butter together in a double boiler. Then allow to cool slightly.

Whisk the eggs with the sugar and add to the chocolate mix, stirring until combined. Sift in the flour and cocoa and fold mix together.

I use a 23cm square tin. Bake at 160°C for 1hour.

Mind you, this is why I halved my flapjack recipe - the quantity of butter was too large to contemplate :o

I do this one www.bbcgoodfood.com/recipes/605627/toffee-brownies and vary it by adding grated orange zest for choccy orange brownies, or chopped nuts etc. You can use light Muscovado if you don't want them quite as treacly.

I also like Lorraine Pascale's recipe which uses a packet or Oreos here

After a friend made these I had to steal the recipe. You mix chunks of unmelted choc into the mix so when eating them you keep finding nuggets of squidgy chocolate. Making them again this weekend!

Thanks all, much appreciated, I promised my team at work I wouldn't stop baking brownies until we found the best recipe so I can't wait to try these.

I think the Nigella recipe might have had too little sugar and too much cocoa which made them a little bitter, comparing it to some of these recipes.

Soup could I just leave out the walnuts in the recipe or would I need to adapt any of the other quantities - I can't stand walnuts.

Yes, I always put choc chips instead of walnuts too. Or rather I smash up a bar of dark chocolate with a rolling pin :)

Nigel Slater. It you must refrigerate them to make them cuttable.

Tana Ramsays ones with cream cheese in, marbly ones are good for something different.

My best ever reciepe and voted as such by my office is an adapted Jamie Oliver:

9oz unsalted butter
7oz dark chocolate
2oz dried cranberries
2oz mixed chopped nuts (I use a mix of walnuts, hazelnuts & brazil nuts) optional
2 3/4 oz drinking chocolate powder
2 1/4 oz plain flour
12 1/2oz caster sugar
1 teaspoon baking powder
4 large eggs

Melt the chopped chocolate & chopped up butter in a bowl over simmering water.

When fully melted mix in cranberries & nuts (if using)

In a separate bowl mix the sifted flour, sugar, chocolate powder & baking powder.

Add the flour mixture to the chocolate mixture and stir together well.

Beat eggs & mix in.

Bake in a lined brownie tin (12 inch rectangular) at 180C for 20-25mins. They should be slightly springy on the outside but gooey inside (a skewer should not come out clean).

They are the best

These won 2 prizes in the town show

200g Butter
50g Cocoa Powder
4 Eggs
400g Sugar
2tsp Vanilla extract
100g Self Raising Flour
200g melted Dark chocolate

180 C
Melt butter, stir in cocoa and melted chocolate.
Beat eggs and sugar and vanilla for ages until very pale.
Stir in the chocolate mixture, then the flour.
Cook for 20-25 mins keep checking though.

The top rises up, then settles to a beautiful cracked surface.

Tried the Suziwong recipe and taste wise it is excellent - I substituted the walnuts for some chunks of white chocolate.

However it was very, very moist and almost a bit greasy in the middle and very flat. I cooked it for way longer than the recipe and just couldn't get it to dry out. So it would make a great brownie for a pudding with ice cream but not as a cutting and sharing tray bake. What did I do wrong?! I wonder whether a bit of caking powder or something is required.

The best brownie recipe for this househol comes from an Usborne Kids 1st Cookbook. Chewy but with the crispy topping brownies require. And yes with a lot of sugar!

110g (4oz) butter
110g (4oz) dark chocolate
225g (8oz) sugar
2 beaten eggs
110g (4oz) plain flour
1/2 teaspoon baking powder
a pinch of salt

Method
Heat the oven to 180c
Grease a shallow tin 18 x 28cm (7x 11 inches)
Break the chocolate and butter into a bowl and either melt in a bain marie or put in the microwave on a very low heat. As soon as you notice the butter melting and chocolate losing shape take out of the microwave and stir until completely melted. Be very careful not to put on full heat as you will burn the chocolate.
Add the sugar
Add the beaten eggs
Add the flour, salt and baking powder
Spread the mixture into the tin
Bake for 30 minutes

Leave to cool for about 5/10 mins, then cut into squares. Can be messy with flaky top
