I bought a sack thinking they'd keep a month but they are growing eyes at an alarming rate after 2 weeks. What can I make to use them up quickly. I'm thinking they'll be ok for another week or so, but need yummy Carb loaded ideas Grin

Loads of mash and freeze some (or just eat it yum yum)
Dauphinoise
What I call 'red potatoes' - fry up cubed potatoes, add onions, tins of tomatoes and chillies, balsamic vinegar and smoked paprika if you like and cook until it goes sticky. Serve with eggs and cheese and spinach. Yummy.
Um... baked potatoes?

Firstly, I'd look at the storage of the potatoes. Are they in the cool and dark? can you have a sort through to make sure that there's no sweaty ones in there? The sack isn't plastic, is it?

You could always bulk-make mash and freeze?

Otherwise:
potatoes boulangere?
patatas bravas?
Potato curry - a saag aloo thingumy jig?
Microwave crisps? (I have never done these)

Oh and boulanger poatatoes which are a bit healthier than dauphinoise, but still tasty.

You can use them after they sprout, just cut the sprouts bits off.

Have you got any space in your freezer? I think you can freeze mash. You could also make and freeze pies with potato chunks in them (Cornish pasty type things), I haven't frozen roasts or boiled before though (not to say you can't though)

Otherwise, lots of potato dauphinose as an accompaniment is always my favourite way to use up potatoes. www.bbcgoodfood.com/recipes/1096/potatoes-dauphinoise

Maybe some winter veg soup and jackets for lunch?

A potato based curry? Bombay potatoes type thing?

I am at this moment making Heston Blumenthal Triple Cooked Chips which I will then store in my freezer.

I do them to the end of Step 4 of the recipe then freeze until needed then bring out as required, thaw and do the final fry.

I do a mass fry about once a month but you need a fat fryer but it makes the best chips ever.

Homity pie. On phone so can't link, but Google it. I use the Hairy Bikers one as a basis, and bung in whatever is to hand. It's delicious, and almost as nice cold for lunch.

Potasto cakes - mix cold mash with flour and an egg and loads of salt and pepper, make golf ball sized lumps, flatten and fry.... YUMMMMMMY

Thanks! I wouldn't have thought of all these! I've just made homemade oven chips and they were yummy.

They are in the dark and in a paper sack, but DP keeps forgetting to close the bag up.

I'm happy to keep using them and cut the eyes off but they are likely to go spongy too and I read that makes them bad?!?

I like the idea of freezing the mash, I used to do this for DS when he was a baby.

Going to stick all these on a list Grin

You could blanch, cut some into wedges, some into roast potato size and then freeze.
