Everyday bread recipe please

Hi

I sometimes make "fancy" breads, olive, cheese, that sort of thing. But want to decrease the amount of shop bought bread we use.

My 3xDS and I all have sandwiches for packed lunches so we get through alot of bread. We like 50/50 bread and wholemeal mainly and generally just buy whatever is 2 for £2 in Tesco.

Do you have a good everyday bread recipe you can share - and would it work out cheaper than £1 a loaf?? I have a food processer to cut down the kneading but no bread maker.

I've been making HFWs 'magic' bread for ds recently - 250g bread flour, 250g plain flour, 1 tsp fast action yeast, 1 1/2 tsp salt, 1 tbsp olive oil, 325ml warm water. Mix, knead, leave for an hour, shape, leave to rise, bake at 200' for 20 min or so.

DS and dh like it a lot, and you can do pizza base/rolls/loaves with it

CMOT, MrsMinivers - are these breads crusty, or soft like ready-sliced 50-50? Like OP we do alot of packed lunch sarnies too, but crusty bread in our house only goes down well with soup or 'saucy' pasta.

VERY crusty (but with soft chewy inside) Generally breads with a higher fat content (milk and/or butter in) make softer breads. I've got a recipe for a soft loaf recipe somewhere, will try and dig it out later.

oh yes a soft loaf would be better for packed lunched please....is there such a thing as a no crust bread? or will the addition of milk and cooking slowly be enough.

Nigella does a soft dinner roll recipe which I've tried once, might see how that works in a loaf.

I struggle with how long to leave it to rise - is longer always better - or with fast action yeast does it not make any difference at all?

Well, I chuck mine in the mixer, and leave it for a couple of minutes, so I couldn't actually tell you on the kneading front.
But in the interests of this thread, I currently have a batch of 50% 'artisan' wholemeal, 50% white plain flour rolls rising

I made these as baps because I dont have a loaf tin yet. But it came out lovely and soft.

50:50 rolls are still soft and yummy according to ds, and look like they have a nice texture. He had cheese rolls for breakfast
