Slow cooker - anyone know a slow cooker recipe for salmon/fish?

I want to do salmon tonight but fed up of doing it the same way all the time. Anyone know a recipe for the slow cooker?

I think a slow cook might ruin the salmon really.

Yes I thought so too, but wantd to just bung it in and walk away. I'm a lazy cook!

This is good for a lazy cook- v quick, easy and yum. Got it from red magazine a couple of months back. It doesn't need to be served with asparagus.

1 salmon fillet per person (pp)
100g asparagus pp
juice of 1/2 an orange. zest of 1/4 of an orange pp
1 desert spoon (dsp) of dill pp
1 dsp of olive oil pp
1 dsp of white wine vinegar pp
1 dsp of paremsan pp
25g unsalted butter pp
1 dsp creme fraiche pp
1 tablespoon fresh coriander pp

  • dry salmon with kitchen paper. Trim asparagus
  • heat orange juice, zest and vinegar in small pan and simmer for 4 mins
  • Heat olive oil in non stick pan. Add salmon, cook for 4-5 mins each side
  • Cut butter into small chunks and whisk it gradually into orange mixture until it makes a thickened glossy sauce. Remove from heat and whisk in creme fraiche, coriander, salt and pepper *Steam or simmer asparagus *Arrange asparagus on plate, place salmon on top, pour over sauce, voila!

Sorry panicpants but you can't really slow cook fish at all. You could make a tomato based stew thing and add the salmon 10 mins before serving but that's about it really.

Just had another thought, what about a one pot recipe I can pop it in and leave.

It's because dp never knows what time he's home as he travels quite a bit during the day, so I've never sure when to have dinner ready for. It's such a pita when he gets in at 8 ot later to then start cooking.
