I am doing these jars for my fundraising.
8 Ripe Mangos - peeled and diced (Costo has them)
2 Large Onions - Diced
5 Large Apples - Peeled and diced
2 Peaches - peeled and diced
1/2 cup dried Blueberries (or fresh if you have)
2 Tsp fresh grated ginger
Zest and juice from two lemons
1 Tablespoon minced garlic
2 Cinnamon sticks
2 tsp ground cinnamon
1 tsp cardamon
1 tsp nutmeg
1 tsp salt
1 tsp pepper
1 tsp tabasco (hot pepper sauce)
1 1/2 cups brown sugar
1 1/2 cups balsamic vinegar

Toss all of this into a large dutch oven pot. Simmer for two hours or more until all is tender. Place in sterlized jars and process in jar canner for 15 minutes at high boil or simply place in sterlized jars and keep in the fridge. This is delish on chicken or pork and can be stuffed into puff pastry for an easy appetizer.

This seems an appropriate place to ask but how do you know when a mango is ripe? I know how to deal with it once it is ready for eating just not how to tell that it is ready to eat - tell me sunchowder and I will be seriously tempted to make that!

It will be soft to the touch and have a really fragrant scent. When you peel it, it will be very orange in color and terribly juicy. When you have to peel and dice so many, I will peel them all first, then I will slice each one in cross hatch down to the pit, and then go back and trim the flesh off each one. This way you get lots of the fruit off and it is already diced.

my nieghbour brought us round some fresh mangoes this evening! I coudln't eat them all before they go off?

Could I use frozen fresh blueberries do you think

And what about red wine vinegar?

Thanks Suzy! Of couse you can use frozen blueberries just the same. If you use wine vinegar, you might want to increase the sugar by at least 1/2 cup. In fact, I would put the wine and sugar together in the pot first and simmer for 15 minutes, then add all the fruits, etc. I don't know if you have Costco there by you. If you do, they have balsamic vinegar that is delicious and priced right too. It is their own brand Kirkland (I could drink it by itself!). Let me know how it comes out for you! :)

I live in Australia now so no costco

I will reduce the vinegar as a sugar syrup. Although I may not have time to do it with this lot of mangoes as it's DS1''s 5th birthday this weekend and I have a cake with a diagram of the solar system on it to make. That's what he wanted.

well it's going to be a plain vanillia base (from two packets) in a rectangular tin, I shall cover it with blue butter icing and make the planets orbit aroudn a big yellow sun, TO SCALE, and make them out of rounds of pastry iced and painted.

Or may go mad, I haven't decided yet
