Hey Aussies - what is verjuice??

Got another a cookery book, Bourke Street Bakery and it has in some recipes something called verjuice.

What is it??!! It's in some pies - possibly a veggie type stock maybe? Only used in quite small quantities.

The brulee tarts in the book look fab.

Nigel slater refers to it in his books, I think it's a kind of virgin grape juice.

Yes just wiki'd it. It's sour juice made from unripe grapes.

google says it's an acidic grape juice - a classical french cuisine substitute for vinegar, and is an ancient cooking ingredient

Didn't think to Google - MN is a good sauce of info and helpful tips on alternatives maybe??

Possibly pomegranite molasses could be agood alternative? That is acidic but with a fruity edge.

Like trying out odd ingredients!

i've never tried pomegranite molasses but i'm a bit of a food punk and it can't hurt, can it Grin

or even wine vinegar?
