Bought it but don't know what to do with it - any quick and easy (and yummy) ideas would much appreciated!

I use it instead of beef mince for bolognese, shepherds pie, burgers etc. Pep it up with some Worcester sauce.

Thanks for the ideas - any tried and tested recipes before I hit a recipe site. I have been veg for a very long time and do not plan on tasting what I make (also I am not the best cook despite my efforts). Ta!

meatballs

500g minced lamb
2 pieces of bread made in to crumbs
1 egg
1tsp dried herbs of your choice
good dash of worcester sauce
good dollop of tomato ketchup

mix well and shape in to balls, about 20 golf ball size, arrange on a dinner plate, cover with clingfilm and chill for 20 minutes.

in a large frying pan, heat 1 Tbsp of olive oil and add the meatballs one at a time, by the time you have finished adding the last go back and turn the first and then the rest till well browned.

Add a slug of red wine and let it sizzle then add either a can of chopped tomatoes or a jar of passata and reduce the heat to a simmer. Add some salt and some sugar and stir gently to mix the sauce. If you have a lid big enough put it on or just simmer for 10 minutes.

Remove meatballs to a serving dish and add a large dollop of greek yogurt or creme fraiche to the sauce and mix it in then pour on the balls.

Any leftovers freeze very well

oh sorry forgot to say add half an oinon very finely minced and a shake of white pepper to the meatball mixture.

lasagne.... i think lamb lasagne is sooo much nicer than beef (although i never can tell in spag bol / cottage pie etc!)

the best way to mix them is with your hands, do you think you could do it?

If you put a little cube of cheese in the middle of the meatball it will melt during cooking and ooze out when you bite them (the sluglet's favourite)
