Pies and One Pots?

Any ideas from you lovely people gratefully received!

I have the same two family members for dinner each Friday for a catch up after their week in the Big Smoke, it is a lovely catch up as we are in the country so a bit of town life is great, as is the wine...... Complicating factor is an 8 week old baby so I need/ want to make things in advance so that if bedtime doesn't go to plan I'm not stuck cooking instead of chatting!
Fish pies, cottage pie, chilli, curry, shepherds pie, chicken and leek pie already in play, seeking fresh inspiration! x

Are you happy to have vegetarian? If so, what about this vegetarian
jambalaya I've posted this before because it's quick, easy and tasty. I think it traditionally has chorizo with it too so I suppose you could add in something like that too.

I'm impressed that your 8 week old has a bedtime and you regularly host your family!

Slow-cook casseroles and pot-roasts can stand being left in the oven for an extra hour if necessary. Beef in Beer, Cassoulets, Shoulder of Pork, Lamb Tagine....

Veggie great thank you, that sounds lovely! Bedtime really not that impressive, so far she's good with it but under no illusions! However it gives me evenings back which makes the wakeful nights a bit easier....... Ish, bless her she just gets hungry!

What about a nice curry? It can be made earlier in the day or slow cooked with rice made in the microwave (it never fails) and some naan bread, pompadoms and some relishes. I make basmati rice in microwave, 1 cup rice to 2 cups water (serves 2 so you need to double up) with some turmeric (1/2 teaspoon) crushed cardamon seeds, 2 bay leaves and about 2 inches of cinnamon stick. This makes lovely fragrant yellow rice. Curry is usually nicer when reheated, just do the rice when you need it :)
