Tagine?

Hi,

Got. Moroccan tagine kit for Christmas. It has Cous Cous in it?

Anyone else know what you do with it?SadSad

Ad far as I am aware, the tagine is generally used for serving although I have cooked in mine without the lid. Good Moroccan cook book will have lovely fish and meat stews, full of dried fruit and pickled lemons!

The whole kit or just the cous cous?

I use mine on the hob (with lid) to cook lovely lamb and chicken dishes. My favourite is a very simple slow-cooked lamb and prune dish flavoured with honey, saffron, ginger, cinnamon and other warm spices from Ghillie Basan's 'Modern Moroccan' cookbook.

Read any instructions that came with the tagine should tell you how to prepare it for use on the hob

Use the Tagine for your veg / meat. Basically a slow cooker - bung in your ingredients with lid on and put in the oven at a low heat (or on hot coals if you are cooking outdoors in the Atlas mountains in Morocco) for several hours. Prepare the couscous itself separately. I do it a quick cheat way: put about 1cm thick layer of couscous in a flatbed dish. Sprinkle some stock powder on it and add a few nobs of butter. Cover with boiling water (to about 1cm higher than level of couscous). Put a sheet of cling film over to keep moisture in and leave for 10 mins then lightly fluff with a fork before serving like rice next to your stew.
