Home-Made cakes, pies, tarts etc - how long do they last

Assuming of course they don't get eaten in one sitting - how many days do they keep for ?

depends what the are
spongey thins 3 days in a tin
pirs 4 days in the fridge, alyhough the loose their crispness
fruit cake 7 days

what are you baking?

Also wondering how long a sponge cake lasts for - ie how far in adavnce can you bake it?

I made my mince pies well before xmas and kept them in an airtight thingy and they were fine!

Fruit cake should last a year!

Sponge, depends on the sponge I think.

Nothing lasts very long in my house as I am a greedy piglet

However - sponge really is best if you can make it as close to when you're going to eat it as poss. It's just nicer fresh, but will keep in an airtight box for about 4 days. Cookies and mince pies - denser things like that can last a few weeks if they are kept in a well-sealed box or tin. Fruitcake can last for ages and ages - I had two tiers of wedding cake left over and used one for ds's christening 2 1/2 years later and one for dd's 5 1/2 years later. I left the cake in its icing for storage, then when I needed it I took the icing off, poured brandy all over it and stuck it back in the oven on low for about 40 mins, then re-iced it. For ds it was perfect, for dd it was slightly dry and not so great but still perfectly edible. I reckon fruitcake can probably survive a nuclear winter along with all the cockroaches.
