how do you make onion sauce?

is it the basic white sauce and then chuck in some softened onions? If so, does the sauce actually taste of onion? I imagine it would taste of white sauce with some onions hanging around in it...?

Boil the chopped up onion in milk - then use that milk to make the white sauce (adding the softened onions later

one way to do it is to peel an onion and soak it in the milk you will be using for the white sauce. That will give flavour on one level, Then you can either boil a couple of chopped white onions which you ahve softened in butter in a little milk and add that to the sauce if you want it to be pale in colour. Mace and nutmeg and white pepper and of course salt will bring out the flavours.

oh that makes sense - that's what i'll do. suzy the sauce isn't for anything. I was making cheese sauce this morning to freeze for my son, then made a shepherd's pie for tonight and whilst chopping the onions I though "hmmm, now - what about an onion sauce" and then came up to mumsnet to ask Grin
