please can y'all let me know how to do cauliflower cheese in advance?

It's for a Christmas day side dish (particularly as there's one veggie who I know always likes it when she cooks).

I've never made it and I'm picturing rock hard or mushy cauli, or even worse food poisoning from putting cold stuff with hot stuff or whatever.

So, please, what recipe, and at what stage to chill?

Steam you cauli for about 8 mins. Make your cheese sauce (I'm a roux method girl). Pour sauce over cauli and then pop into the oven for 10-15 mins before serving.

If you need to chill, wait until it has cooled after pouring sauce over.

But why not just make on the day?

Boil/steam the cauliflower well in advance. Don't over cook it. And really allow it to drain properly. Lut a tea towell over to absorb the water.Make your roux in advance. It's nice if you add abut of Dijon mustard and or Stilton.

I've got a housefull o' folk (13) and a baby, so that is why I don't want to cook on the day. I will be running back and forth getting drinks, bottles, kitchen roll, nappies, crisps, etc

Right. Get your cauliflower and steam/ boil until al dente. Can't think of the word. Anyway , then drain it and out a tea towell over the top to absorb the water.
Separately prepare a roux. Find a recipe or a large knob of butter , melt Nd stir in plain flour. When so dry it bundles up, slowly add milk stirring all the time witha wooden flat edged spoon to ensure doesn't stick to the bottom. Then continue to stir as thickens

Put in some grated cheese. Add Parmesan on top. A roux/cheese sauce is best to chill before you use it. Too mush cheese make its oily. Not draining the cauliflower make it watery

1 cauliflower

40g plain flour
40g butter (I usually melt this in micro for easiness)
1 pint milk
70g cheese grated (I always use more)
pinch salt & cayenne pepper

Boil cauliflower until its right tenderness. l like it quite mushy but its supposed to be firm I think.

I make the cheese sauce by putting everythingelse ina separate pan (not the cheese) and whisk over a medium heat, till it begins to boil. Turn down to a low heat and whisk constantly whilst adding cheese till its all melted. Bubble away for 5 mins. The trick is to whisk constantly and do not scrape the bottom of the pan.

Put cauliflower in a oven dish and pour over cheese sauce and stick it in a medium heated oven for 10 mins. Grate cheese over the top for the last few mins.

Just read your op. chill the cauliflower and the cheese sauce seperatly and mix before cooking. If you've never made it before def add the Dijon mustard as covers most disasters .

I usually just let it boil for about ten minutes then check by stabbing with a knife! But im happy to let it boil for ages as i like my cauli really soft :)

You can buy ready it made , just need to reheat. Or get a packet of geese sauce and cook a cauliflower. Cool both then pour on sauce. Grate a bit of extra cheese before baking 30 mins ish

Lol geese sauce pmsl. Auto correct fluffed up. Cheese , cheese sauce mix . I'm making mine in advance and chilling in the fridge.

Here’s Jamie’s version. This is yummy, but I would use mature cheddar instead of Red Leicester & cook both the cauliflower & the dish for a bit less time than he suggests. Definitely don’t skimp on the English Mustard. You could make a half quantity, or use a mixture of cauliflower & broccoli obv.
