Veggie xmas dinner ideas?

Can't do Quorn roast again! There are three of us, plus one meat eater who has his turkey or whatever.

What about stuffed portobello mushrooms? Stuffed with Boursin garlic and herb cheese and topped with some breadcrumbs. Roast in the oven for 20 minutes. I have in the past made Nigel slaters mushroom tart. Google the recipe. It's very quick and I love it. I do the roast potatoes and veggies as normal to go with either. If there are only the three of you why not just choose your favourite dinner - whether it's Christmassy or not.
Worth mentioning that I really dislike nut roast but I know lots of people would choose that.

I'm probably going to do a stuffed mushroom for dh alongside all the other veggies, but he doesn't particularly feel the need for anything "special".

However, at the back of my head I am thinking about what I could so with Yorkshire pudding. We are doing them with the turkey because we all love them so I keep thinking there must be a way to do it as a proper dish for him. Perhaps a vegetarian toad in the hole?

Yorkshire pudding - roast a little dish of baby shallots, garlic, whole mushrooms and some herbs and use these as the insides of a toad in the hole?

Or since there are three of you, how about a stuffed butternut squash? The meat eater could have a slice as a side vege too. Jamie Oliver's Hamilton Squash is a nice starting point, though I often tweak the filling according to what I've got/fancy. Or you can halve a squash and scoop out the seeds. Slash the flesh a bit and drizzle with oil and s&p. Bake until nearly tender then add fried onion and garlic, some sage, some chopped spinach and some cream cheese and stick back into the oven until bubbling.

Mushroom Wellington - if you google, there are lots of recipes online with several variations but it's basically puff pastry filled with some combination of mushrooms and nuts/spinach/cheese/whatever you feel like. Very easy, you just need to buy some puff pastry. In fact, pretty much anything wrapped up in puff pastry could work as a Christmas main course.

Or the other one we often have is Delia's parsnip roulade but that's a bit more fiddly to make.

There are some fab nut roast recipes out there. I do a lovely one with cashews, mushrooms and thyme in it which is delish with veggie gravy and all the rest of the trimmings.

Every year I do a Cranks nut roast. Delicious - and goes with all the usual Christmas trimmings.

I was veggie for 17 years and I used to love it when my DH made a very simple parcel of filo with just some Stilton and some cranberry sauce in it. He put about 3 squares of buttered filo on top of each other at angles then gathered the filo up around the filling and sort of scrunched it at the top. Bake until golden and Stilton is melted.

The 4 veggies in our house are having Christmas Pies. I made them a few weeks ago so i just need to get them out of the freezer on Christmas Eve.

Jamie Oliver's feta and Spinach Pie. But fiddly but not difficult, looks quite nice & delish. Buy more filo than the recipe says tho. It's online. I eat meat but would love this on Xmas day!

I've made Delia's Xmas Roulade a couple of times - has all the nice Xmas flavours but no meat. It can be a bit time consuming - you can do some bits in advance.

They all sound lovely...but 13yo DD will NOT eat mushrooms Sad

I'm thinking some kind of puff pastry tart with a filling that does not include mushrooms. I'll research the filo spinach and feta pie too.

got a fab recipe for chestnut bourginon pie, which i have every year. sadly it has mushrooms in it, but i'm sure you could substitute summat.

We had relatives over for a pre-Christmas Sunday lunch and we had some Linda Mac asparagus tarts which went down well. Might do that for Christmas, or maybe see if there's anything tasty in M&S...
