I need inspiration for a nice pudding for Christmas Eve to feed 4 adults, 2 kids and 2 toddlers that I can make in advance and will survive a 40 minute car journey - has anyone got any ideas? Want to make something really special (also must not have nuts)

Profiteroles. Will travel fine in a big Tupperware. You could be super fancy and pop some edible gold leaf on.
Less fancy but pretty - I've made tiny meringues with edible glitter mixed in to have with double cream and strawberries. Would also travel fine, could assemble on arrival.

I'm doing that ^^ but orange and cinnamon in the cheesecake bit and dried cranberries on top. I did it with lemon last year and it's really easy. Freezes quite well too, making transport easy Xmas Smile

Ooo Are profiteroles hard to make? Never made them before. I've actually got edible gold dust in the cupboard! Meringue is also a great idea

Profiteroles are much easier than they look but take time because you need to give them drying out time. Am impressed that you happen to have gold leaf in :)

This thread has loads of ideas - in fact I was just looking on it to decide what to cook for Christmas eve! I have gone with the Christmas Cheesecake suggested on that thread - mmmmm!

I've made snowflake meringues (basically meringue mixture piped into snowflake shapes) with edible glitter and silver balls on to serve with a cranberry & orange sauce. The meringues have worked well (even though my piping skills are not up to much Xmas Grin
