What to do with 24 Eggs?

I have a lot of eggs at the moment - they're all very fresh and I want to use them asap. Have made a huge pavlova already.

There's only 2 of us (plus 9 month old DD who will eat anything), any suggestions please?

Ice Cream? Custard? Sponge cake, then freeze it? Hollandaise Sauce?......or all of them?

Separate the whites from the yolk. Butter a ramekin and put liver paté in it. Mx the egg whites woth creme fraiche and pour over the pate. Pop the yolk onto the top, grind some pepper over it and bake at about 175 to 180 until just set. Serve with chives and good bread to dip into it..

Or, chop and fry some peppers and onions. Add a can of tomatoes and some chilli to taste. Fry fast to reduce and put into a baking dish. Makes some holes in the mixtures and Crack some eggs into the holes and bake for 10 minutes til just set.

With both of those I do two to three eggs per person depending on how hungry we are.

Quiche, meringues, Spanish tortilla, waffles, eggy bread, egg toasted sandwiches, omelettes, pancakes, brownies (recipes often call for four eggs)...

Make loads of cakes (and then eat them all!)

Giant frittata for tea. Cake with home-made custard for dessert.

Fresh lemon curd. Good for presents. Think it's fine to keep in the fridge for at least a week. I use Delia's recipe.

Lemon curd will use an impressive amount of yolks.

Chocolate mousse :)

Make a couple of quiches (MN pun not intended) which can also be frozen for use over the xmas period; you would use about 3-4 eggs per quiche. Very easy especially if you buy the pastry

Worst case scenario: Egg white (and yolks) freeze rather well if separated.

A 10 egg carrot cake ( you can make and slice up small and give to 9 month old), we make a sugar free one

Quiche? We make this one www.bbc.co.uk/food/recipes/quichelorraine_71987 and is lovely. Keeps great for the next day but will only use 5 of your eggs.

Hard boil some of them and put into fridge for using in salads or sandwiches in future. Make sure you label them so you know which are hard boiled! Grin
