Dauphinois potatoes- or similar without cream?

I want to make some kind of potato bake as a side for boeuf bourguignon but one guest hates cream. Any ideas for alternatives?

Use stock - prepare the potatoes in exactly the same way; put in stock for baking and if you want, add cheese on top.

Use stock and sliced onions. Can't remember dish's name but I didn't make it up.

potato boulangerie - layered potato slices (can add sauteed onions and garlic if you like) like the dauphinois but cover (just slightly below the level of the potatoes) with stock. Dot the top with butter and cook the same as you would with a dauphinois. Can also add rosemary or thyme if you like as well.

Pommes Boulangere. Layer into a greased gratin dish, sliced potatoes, thinly sliced onions, finely chopped sage if you've got it salt and pepper and pour over some vegetable (Marigold powder) stock ( mixed with a little bit of milk), dot the top with some pieces of butter and bake in the over at 180C for about an hour.

That's a rough summary of a Delia recipe.
