I'm cooking the Jamie Oliver get ahead gravy. I've roasted the chicken and veg, then fried it with gravy and added water. But it's soooo runny still! It's been simmering for about 40 mins, so I don't think it's going to thicken on its own.
How Can I thicken it up?
Any help much appreciated.
I've tried a flour and butter roux, but its not made any difference.

Transfer it to a wide but deep frying pan & boil it hard to reduce a bit faster.

OR

Make a paste of 1tablespponof butter & same of plain flour & slowly add to boiling gravy. That should do it.

I'm sure my friend said she blends breadcrumbs with things to thicken up the gravy.

In a blender.

But I've never done it

1tbsp Cornflour...as long as you cook it out and let the gravy simmer for about 20-30mins you wont get a cornflour aftertaste

No cornflour unfortunately, but thank you.

I was trying to be clever and made double the amount for Christmas Day. Maybe I should have just done the original recipe, twice! The house smells lovely though

If you are doing double you will need quite a lot of the butter/flour mix.

Cornflour will certainly thicken it & you could just stop now, freeze it & do the cornflour thing when you reheat it on the day!

Makes the whole Christmas dinner process so much less stressful if you have your gravy done ahead!

And I always reckon it's the one meal of the year that people don't notice too much as long as you have hot gravy & hot plates!

Honestly, the DCs are probably tired/on a sugar high by then, you are certainly tired & fed up with food & most other adults are either a bit merry Wine or tired or in a huff!!

Try mixing cornflour and water together and stiring it into the gravy as it bubbles.

Thank you, it was simmering for about an hour and a half. I did two lots of the flour butter roux and it did thicken up a bit, enough to not be water like anyhow! Thanks all for posting. :)
