What´s the difference between red, yellow and green lentils? I have a good recipe with red lentils but only green or yellow lentils are available where I live. Does it make a difference?

Red lentils cook down to a mush whereas green lentils retain their shape, so they're not interchangeable in recipes afaik. Don't know about yellow lentils!

Red lentils go much more mushy when cooked they don't have the same consistency as green lentils which stay more firm. Not sure about yellow ones.

If the recipie calls for red lentils I wouldn't use green ones though yellow ones might be OK - maybe someone else can help with that.

Yellow are most similar to red lentils. What is the recipe for yellow are good for dahl or soup. Green more for a more filling recipe. Red lentils are actually the most common form and you don't need to soak them you can cook them from dried. Have you got any health food shops were you live? they should stock them.

oops missed spacedonkey's message - same as mine really

Ok, thanks ladies, I´ll try the yellow ones now. Got to get ´em soaking. It´s for a vegetarian curry.

Oh yes yellow ones should be nice in that. Enjoy. Smile
