What can I have for dinner?

Being lazy and cant think of what to do, want something light, fairly healthy, quick and easy.

Any suggestions gratefully received!

Cant have fish, we had it friday(god what a cliche). And chicken on saturday, any other suggestions?

Pesto easy peasy

Wizz up basil, pine nuts, garlic and olive oil in food processor and add a bit to cooked pasta.

Also - Fromage frais and smoked salmon.

Just mix a jar of fromage frais with cut up bits of smoked salmon and add to cooked pasta - Use low fat fromage frais for healthy option.

sorry for pesto you also need to add parmesan cheese to the mix after whizzing up the bazil etc.

We just use wholewheat pasta - penne normally - as that is what we have in. Can use any I guess.

For the chicken, red pepper and pesto we just use shop bought pesto. Then chicken strips, and strips of red peper cooked ina pan until cooked/softended. And then mix pesto and pasta together, along with the chicken and pepper. DD loves this and it takes just a few minutes.

For the roasted veg and tomoato - we roast off, for maybe 20-30 in oven with olive oil, whatever veggies we have: peppers, onions, tomatoes, courgette, aubergine, corn, etc. Then we throw lots of fresh tomatoes (or cheat with canned sometimes too) into a pan, with some herbs and garlic, and simmer them down until soft. I never bother with the peeling or deseeding as I am lazy! I then mix them together and serve. Sprinkly cheese and oil on top - and all done.

So, no proper recipe for either here. just a case of throwing in what we have and making it as quick and easy as possible.

Sometimes we add a dollop of low fat creme fraiche to the tomato sauce to make it a bit cheamier.

I don't eat it as I don't have chicken!

However Dh and DD do and have never said so. I do use a fair bit of pesto and that is pretty moist. I also cook my pasta with a drop of olive oil too, which probably helps. And peppers done in oil are very moist in themselves. Just make sure you coat the chicken with pesto too and it seems fine.

It is DD's favourite meal at the moment.

hulababy can I just say your dinner was fabulous. I made the roasted veg one, and dh has declared it 'the best tea you have ever made' ... so I told him never to moan about mumsnet again.
he is now impressed by the power of mn Grin
