Xmas lunch - needs to be transportable, microwavable and veggie!

Hi, for very convoluted reasons we (me, DH, 2 DSs aged 4 and 8) will be having two 'special' meals on Xmas Day - (lightish) lunch with DH's elderly gran, then proper Xmas dinner at DH's mum's. It's the lunch that's the problem.

Our food needs to be veggie and microwavable (gran only has a microwave). I could cook at home, but we live 50 miles away, so by the time we get there, it'll need reheating anyway. Microwaves aren't great for my usual Xmas ideas (savoury veggie pies/tarts, roast veggies etc).

We'll be having our 'proper' Xmas dinner at tea time at DH's mum's, so we can't be too full from lunch. Anybody had to do similar? Any ideas for something that'll still feel a bit special/different for the kids? Thanks in advance!

Stuffed peppers? I find peppers done in the microwave better than in the oven.

Make the stuffing ahead of time, I'd use rice, mushrooms, nuts, onion and maybe some vegi cheese to top.

Serve with some veg. If you get the pre prepared stuff in a bag from the supermarket you can just open the bag, add a spoonfull of water and microwave in the bag.

provencal tian
bake in a round pie dish that fits the microwave and reheat in same dish.

I sprinkle dried thyme and no parmesan as it would go soggy.
Its even better if you drizzle with the following when thoroughly reheated:
Olive oil whisked with lemon zest, grated parmesan and pepper.

Serve with crusty bread and a nice slab of cheese.

Cabbage rolls in tomato sauce would heat up in a microwave. Bring some bread, cheese, mince tarts or Christmas pudding?
