processed peas - just what is the process?

what do they do to them to make them processed and why do they taste so different?

they boil the buggers to death and they have no fight left in them..also if you get marrowfat peas they are completely different ball game

same thing only they're a different variety of pea. good for mushing, obviously..(bicarb)

aaah - so to make mushy peas I would get some marrowfat and add bicarb? Who discovered this? Weird!

why do they have so much colouring in then..does the bicarb bleach them?

Really don't like mushy peas. My Mum used to make them sometimes with a ham shank in the same pan.

My absolute favourite peas are straight from the pod to the mouth.

When you do your own mushy peas you can get a capsule or something that adds the colouring back in, my Mum never used it and they just ended up a dull colour.
