home made soup diet - recipes please

Feeling sluggish and bloated after Xmas excesses so am sort of detoxing (well, having loads of veg, not giving up wine though). Sooo, I shall be making lots of soups. They are low-fat, full of vitamins and good stuff, and filling.

My favourite is carrot and coriander -

use fry-light to fry 1 onion
add as many carrots as you can be bothered to chop (@ 1lb)
1 teaspoon ground coriander
half teaspoon cumin (ground or seeds)
whizz around the pan a bit
add 1 litre veg stcok
boil and simmer for 25 minutes,
blend or push through sieve.

this soup is so easy and really nice, also makes a good meal for rest of family (they have a swirl of cream and some nice crusty bread too).

Can anyone offer more ideas though? I dont want to turn orange.

I do red lentil and (low fat) coconut milk soup which is yummy - even fussy dd will eat it! Basically I saute loads of vege in a spray of one cal oil then add spices as desired, then a handful of lentils a tin of coconut milk and a tub of passata - you can vary it in all sorts of ways and make it thin, thick, smooth or lumpy as wished - I like it lumpy!

Wow, bunny - that sounds nice.

I occasionally make Gazpacho:

Large pile of tomatoes (peeled)
1 red pepper
1 green pepper
1 large clove garlic
1 cucumber
about 4 tablespoons olive oil

whizz together with a blender or juicer and then add about a pint of water and some very fine breadcrumbs to thicken it (about 5 slices worth, but whatever gives a good soup consistency). Leave to stand for an hour and eat cold with diced bits of pepper, cucumber and mild onion thrown on top. I guess you could make it even healthier by omitting the water and breadcrumbs but I haven't tried that.

Or mixed veg soup:

potato
lots of other veg, especially onions, carrots and peas, but whatever is around
veg stock or water
some 'erbs.

boil and blend!

PS, bunny, unless you've put on about 2 stone since I saw you I don't see why it has to be a low-fat diet! A bit of cream is good for the soul. In moderation. [lucy123 here. changed name]

I'm ashamed to say that I only mastered soup making a couple of months ago (at the age of 36...) so this one is strictly for cooking phobics like me .

Add one pound of veg (anything) to a softened onion and add one pint of stock (use cubes ) . Cook gently for about an hour. Voila! I feel a bit pathetic for posting something so simple, but this is the miracle soup that helped me shift 3 stone so I'm VERY attached to the recipe !

Harman- my recipe is no points if you steam/spray the onion and don't use potato as your veg.

I do:

2 large parsnips
2 carrots
2 med. onions
1 head of broccoli
some frozen peas

Chop and cook, adding 2 stock cubes, pepper and some curry powder. Once soft, blitz in processor and sieve, to get a really smooth but thick soup. It is really nice and tasty, and totally free on my diet, as well as a good way of getting some of your veg. daily portions.

I cheat - a big pack of frozen casserole mix/stew pack and boil with fresh herbs (garlic if you want)- then liquidise! 10 minute soup

Hey I do that casserole veg soup too! And here was me thinking I was oh so clever at thinking it up! I also add lentils

A good cold preventer is:

450g carrots
tsp ground ginger
squeeze of lemon juice
cover in vegetable stock and cook!

And if you turn orange you could just tell people you were following the Kat Slater beauty regime!

Spicy tomato soup: soften 1 chopped onion with 1 chopped clove garlic, herbs, paprika and chilli powder/chilli flakes to taste; add 1 tin of tomatoes, cook for 20mins, add 1litre water or stock, bring to the boil and simmer for a further 20 mins, liquidise, season.
Butternut squash soup: soften onion, add thinly sliced or grated squash, cook covered for 10 mins or so on low heat (watch it so it doesn't burn) then add enough water to cover the squash, bring to the boil, simmer covered for 20 mins, liquidise, season.
You can add cream or yogurt to both these soups. Yummy!
I also love broccoli and blue cheese or parmesan soup, although maybe not so good for a diet.

0 point vegtable broth

1 red onion, chopped
8oz carrots, diced
3 celery sticks, sliced
6oz swede, chopped
2 pints of veg or chicken stock
1 tablespoon of tomato puree
400g tin of chopped toms
salt and pepper
2 tablespoons of fresh mixed herbs

put all in a pot and simmer for 25 mins. Can puree, thats how i prefer it

0 point celery and leek soup

12oz celery, sliced
12oz leeks, sliced
2 garlic cloves, crushed
2 tablespoons light soy sauce
1 1/2 pints of vegtable stock
1 tablespoons of caraway seeds
salt and freshly ground pepper

bring to boil and simmer for 20 mins. Remove a third of the soup and set aside. Blend the remainder together, then add the the third you put aside and stir together.

Curried aubergine soup

1 onion, chopped
1 garlic clove, crushed
1 tablespoon of medium curry powder
1 aubergine, diced
8oz carrots, diced
1 1/2 pints of vegtable stock
400g tin of chopped tomatoes
salt and pepper
1 tablespoon of corriander

chuck in a pan bring to boil and simmer for 25 mins. Blend.
