I have had a melt down tonight, I can not find quick easy meals?. I have cried into my kids

dinner and am running out of ideas that are quick and easy for all the family,help me please{grin}.

OK get the slow cooker out of the cupboard.

Today go to the supermarket and buy
1 piece of beef brisket
1 packet of new potatoes
1 packet of cleaned and chopped carrots
1 packet of cleaned and chopped other veg - parsinps / swede / turnips etc.
1 onion.

You also need salt, pepper, flour and a stock cube.

Tomorrow morning boil the kettle.

While that is boiling put the slow cooker on high
peel and chop the onion put int he slow cooker.

Opent he packaging of the beef and sprinkle flour into the packet / bag, rub it in a little so it is coated.

Put the floured brisket intot he centre on the pot. Add the potatoes and veg around the edge. Sprinkle iin the salt, pepper and stock cube.

Pour over boiling water. You will come home to a very nice pot roast.

Do not be afraind of tins, there is nothing wrong with the odd tine of soup or baked beans.

Beans on toast, boiled egg and toast, cheese on toast - all acceptable for tea.

My trick is to see what manky old, not quite gone completely off something is in the fridge and then google what I can do with it...I then regoogle until i find something doable with the rest of the stuff I have in!

Strangely (am am not just saying this) I find it quite inspiring...

I too feel your pain.

Egg night is a weekly event in our house - ready meal in a shell.

Are yours fussy aswell? That's when I really get cross. Not having the energy or will power to say 'take it or leave it' is a whip I have made for myself...

Yes I would think tuna fish cakes would be fine to shallow fry from frozen. Worth a try. A good thing to make in bulk and freeze

Pasta with 'green' sauce:
Buy some chopped, frozen spinach. When you get in, put some pasta on. Meanwhile chop an onion, a couple of cloves of garlic & a couple of rashers of bacon. Soften them in some oil. Defrost the spinach in the microwave (if organised get it out of the freezer the night before so it will already be defrosted). Add the spinach to the bacon & onions. Turn the heat up to drive off the water, then add half a carton of cream/creme fraiche/natural yoghurt or soft cheese. Mix with pasta.
You can freeze any leftovers, or use them as a base for a pasta bake.
Takes 10 minutes!
