Food safety question - if I roast a chicken to take on holiday, should I...

a) roast it the night before, chill overnight and transport in a coolbox?

b) roast on the morning, chill as much as poss and transport in a coolbox?

c) roast in the morning and wrap in foil so it cools slowly as we drive down?

(Will be about 5/6 hours between leaving home and arrival at accomodation.)

I think a is both safest and likely to be tastiest, wrapping in foil a la c sounds a bit sweaty! As does b in fact as I think the cool box would become a warm box!

A si the safest for not getting food poisioning.

b would stay at a warm temeperature for a long time

c would keep the bacteria at a too high a level which would likely result in salmonella or other nasties.

Make sure you leave it out of the fridge long enough before packing it up or into the fridge.
