Really easy and light pud recipe needed please

RemusLupinsBiggestGroupie · 24/10/2012 19:20

It's to follow curry and tbh it's just because I like to have something sweet after a meal than because a pud will really be needed.

Has anybody got a lovely easy recipe maybe involving fruit, yoghurt and maybe a bit Eastern inspired please?

This, but ditch the ginger and rhubarb in favour of the zest of 1/2 a lemon :)

That looks lovely. Unfortunately my food processor died.

Nigella's really easy Key Lime Pie www.flickr.com/photos/nettsu/5328617731/

I've made this loads of times and it always goes down really well.

MrsMiniversCharlady · 24/10/2012 19:32

PS You don't need a food processor - I just use chocolate digestives and a rolling pin.

MrsCampbellBlack · 24/10/2012 19:35

syllabub

RemusLupinsBiggestGroupie · 24/10/2012 19:35

Lovely - but probably too rich as it's Nigella! Normally I'd do her baked plums and Barbados cream but fancy a change and fancy something a bit more 'Asian inspired' I think.

then it has to be kulfi or rasmalai

both yummy.....

RemusLupinsBiggestGroupie · 24/10/2012 19:44

No food processor or mixer to do kulfi or syllabub. :( Don't like ras malai.

Thanks so far everybody. More please!

beating is good exercise

RemusLupinsBiggestGroupie · 24/10/2012 19:51

:) It takes so long though and I am a weakling.

I made Nigella's Meringue gelato. Didn't have any rum so used Baileys. So easy (but do make it the night before!). Didn't bother with the sauce and everyone loved it except me who hates ice cream - which is why I made it :)

RemusLupinsBiggestGroupie · 24/10/2012 20:16

Yum - but I hate whipping cream by hand and my mixer is dead.

Need a recipe for something I can just our cream over maybe!

Rice pudding brulee.

Cook pudding rice in milk and caster sugar (see rice packet for quantities), cool, mix in some creme fraiche, spoon into separate small dishes/ramekins, chill in fridge for an hour or two (or overnight), sprinkle brown sugar on top and heat under grill until sugar is caramelised.

RemusLupinsBiggestGroupie · 24/10/2012 20:25

That sounds gorgeous!

Mango Fool ~ tub of Greek yoghurt, tin of mango puree, gently combine the two, serve. All you need is a tin opener and a spoon!

upinthehills · 24/10/2012 20:50

Crushed pineapple (couple of tins)
top with greek yogurt
sprinkle with soft dark sugar
grill or blow torch to melt

yumb!

Drladybird · 24/10/2012 21:52

I would go for a sugar free take on the Indian Carrot Halwa. Easy, tasty and healthy!

multitaskmama · 24/10/2012 21:53

I like this yogurt berry crunch:

One fab recipe with fruit is this mega simple cheesecake, anyone who is tasted this just loves it:

www.healthyindianrecipes.co.uk/low-fat-cheesecake/

ExasperatedSigh · 24/10/2012 21:58

Upside down cheesecake pots:

put soft fruit into individual glasses (ramekins, water glasses, wine glasses, whatever)

mix together some cream cheese, Greek yoghurt, bit of lemon zest, bit of icing sugar

dollop the cream cheese mixture on top of the fruit

chill in fridge, then sprinkle with crushed up ginger biscuits just before serving.

Not remotely Asian-inspired but light, sweet and a piece of piss to make Grin

sashh · 25/10/2012 06:00

Stick some bananas in the oven(with the skin on)

SServe with cream / creme fresh / ice cream and cinnamon sprinkled over.

Yamyoid · 25/10/2012 06:06

I second Nigella's gelato. It's not Asian inspired either but it is delicious and so easy. You could serve it with mango and raspberry coulis instead of chocolate sauce.

Yamyoid · 25/10/2012 06:11

Don't know how you'd make coulis without a food processor. Chocolate sauce then. My guests said it reminded them of Vienetta. In a good way.

RemusLupinsBiggestGroupie · 25/10/2012 18:54

Some great ideas here, thank you. I've made a cake and will probably do a variant on the upside down cheesecakes too.

Thanks all. :)
