I need to make a veggie curry for ten people that is very healthy and very cheap and has all the ingredients available either at Aldi or Morrisson?

Usually I just cook the veg in Patak-type pastes with coconut milk, but I'm aware that they're almost two quid a jar and loaded with fat and salt.

Any ideas?

to buy the spices to make your own curry paste can be fairly costly as an initial outlay, especially from a major supermarket have you got an Asian supermarket nearby where you could go and ask them to make up a mix for you?

but, using a sweet potato/squash base with tinned toms and lentils/chick peas will be very healthy and low fat, without the coconut milk.

I'll look into the costings and have a trial run. I should have said, it's for a cafe.

The cauliflower one looks fab but the only drawback is that some customers will want chips rather than curry or naan Confused and I'm not sure about potatoes plus chips.

I know curry powder is frowned upon, but it is fine as long as it's not the 10 years old jar people used to keep in the cupboard.

Chop onions, fry for a loooooong time, then fry them some more.

Add garlic, ginger, curry powder and then your veggies.

Then add some tomatoes and coconut brick and water.

Ta da. Super cheap curry.
