Rather Boring Freezer Question

Apologies if this is a really stupid question.

I am stocking up my freezer for snowmaggedon winter. I have some leeks, carrots and potato for soup but space is limited in the freezer so I would rather freeze the veg now and make the soup later.

Can I sweat the veg and then freeze them? I'm having flashbacks to my mum blanching half a hundredweight of cabbage for the freezer when I was small. Please don't say that I have to do that

can you make the soup with very little stock, so it's almost the consistency of sloppy mash, and freeze that?

i don't think carrots and potatoes freeze too well unless properly cooked

freeze it in small portions then you add stock/cream/milk when you need to use it?

i like to have at least a weeks food in the freezer/cupboards at any one time in case of emergencies, not just weather but illness/if DD goes into one etc

nothing wrong with a bit of preparation Wink
