sweet potato ideas.

Do any of you use sweet potatoes? I just got some and my dh who is indian said as a child he used to get them for his afternoon snack just cooked in the skin but what else could I do with them? Can I fry them? They are alot sweeter than I thougt they would be.

make latkes with them! Someone on here told me about latkes and they are so nice. Grated sweet potato and carrot are really nice.

we use sweet potatoes for curry or hotpot too. my dp is Indian too.

Yummy with jerk chicken - parboil the sweet potatoes, brown some chicken in oil with a couple of spoonfuls of jerk, then simmer it all in coconut milk and lemon juice for about 20 mins, add fresh coriander at the last minute and serve with rice.

My MIL grows the purple skinned white fleshed ones in the back yard and she eats them boiled in their jackets as a snack.

Sweet potatoes are lovley baked, I'd do the first 10 mintues in the microwave and another 20 in a hot oven but put them on baking parchement as they ooze sugar. Split them and dress with chopped spring onions, sweet corn kernels, greek yogurt or sour cream and sweet chilli sauce.

I love sweet potatoes. Like them mashed with tons of butter and black pepper, baked (those ideas sound gorgeous, suze) and I put them in curry too (I do a lovely - she says modestly - curry with lamb, sweet potatoes, chickpeas and spinach - and I get those Super Smug Mum feelings as both my kids tuck into it with gusto Grin)

But I'm on a diet so I can't think of any of those things...celery...celery...cottage cheese and celery...

wow, thanks for those ideas, the baked ones sound as if they would go down well with my 2 kids, dh wouldn't even look at them if they weren't in some sort of curry! His childhood memory of them didn't mean he would consider eating them!

They're lovely roasted. My 3yo prefers them to odinary roasts.
